Spiced Carrot Hummus
Another beautiful recipe from the beautiful Ingredients:
500g carrots, peeled and sliced into rounds
1 small brown onion, cut into wedges
6 garlic cloves, peeled
1/2 tsp cinnamon powder
1 tsp all spice powder
1 tsp cumin powder
1/4 tsp turmeric powder
1/2 tsp smoked paprika
1/4 tsp cayenne
Salt and black pepper, to taste
30ml olive oil
100g cooked chickpeas
Juice of 1 lemon
60g Lebanese tahini, or more to taste
Water, as needed
Method:
-Preheat oven to 180 C
-In a bowl, combine carrots, onions, garlic spices, salt, pepper, olive oil and mix well. Spread out evenly onto a baking tray. Place in the oven and bake for approximately 30-40 minutes or until carrots have softened. Remove once cooked and leave to cool.
-In a food processor combine the carrots, chickpeas, tahini, lemon juice and 2 tbsp cold water. Blend until smooth. Adjust seasoning to taste. Add more water to blend if needed.
-Get creative with your garnishes! A few ideas include: roasted brussel sprout leaves, pomegranate seeds, za'atar oil, toasted pine nuts, chickpeas, feta etc.
