CURRENTLY CRAVING: Avocado Toast with Basil Cashew Cream

Ingredients:
1–2 slices sprouted bread or sourdough
1/2 avocado
2 tablespoons Bermy Fresh Microgreens
2 teaspoons h**p seeds
Salt and pepper to taste
Drizzle of basil cashew cream (recipe below)

Directions:
Toast the bread. Slice the avocado in half, scoop out the flesh and mash on the slice of toast. Season with salt and pepper. Top with microgreens, h**p seeds and a drizzle of basil cashew cream.

Recipe for Basil Cashew Cream

Ingredients:
1 cup raw cashews
1 cup Bermy Fresh Basil
3/4 – 1 cup water
2 tablespoons fresh lemon juice
1 clove garlic
1/2 teaspoon sea salt
1/4 teaspoon black pepper

Directions:
Soak the cashews in water for at least 6 hours or in boiling water for 10 minutes. Add all the ingredients to a blender and blitz under completely smooth. Store in an air-tight container for up to a week.

Currently Craving: 20 Minute Basil Chickpea Curry

Ingredients:
1 tablespoon olive oil
1/2 small sweet onion, diced (about 1/4 cup)
1 bell pepper, chopped
3 garlic cloves, minced
2 tablespoons chopped fresh ginger
1/2 teaspoon salt
1/2 teaspoon pepper
1 ½ tablespoons dried basil
1 tablespoon curry powder, or more, if you love it!
1 to 2 14 ounce cans chickpeas, drained and rinsed
1 14 ounce can full-fat coconut milk
2 tablespoons freshly squeezed lime juice
1 handful Bermy Fresh Basil, chopped
Rice, for serving
Naan, for serving

Directions:
Heat a large skillet over medium heat and add the olive oil. Once it’s hot, add in the onion, peppers, garlic and ginger with a pinch of salt and pepper. Cook until the onions soften, about 5 minutes.
Stir in the basil and curry powder. Cook for 2 minutes. Stir in the chickpeas. Stir in the coconut milk and lime juice. Stir and bring the mixture to a simmer. Simmer for 5 minutes. Taste and season with more salt, pepper or lime juice if necessary. Stir in the fresh basil.
Serve with your favorite rice, naan or just in the bowl by itself!

The Bermuda Police Service (BPS) continues to seek the public’s assistance in locating, 70-year-old, Janet Nicklaus.

BPS is now receiving reports that Ms. Niklaus was seen in the Scenic Heights Pass, Southampton area sometime between 10:00 a.m. and 11:00 a.m. on Sunday, September 1, 2024.

She was apparently headed in the direction of Southampton Rangers Sports Club. Residents of that area are encouraged to please check their properties and surrounding areas for any sign of Ms. Niklaus.

Ms. Niklaus has been missing from her Whale Bay Road, Southampton residence since Friday, August 30th, 2024.

Ms. Nicklaus, a Bermudian National, is described as being 5’ 10” in height, medium built, dark complexioned, with short, grey, thinning hair.

When last seen she was wearing a light blue or grey, knee length sleeveless house dress and open toed slippers. She may also be wearing an insulin patch on her upper left arm.

We express our gratitude to all those members of the public who have been assisting with this effort so far and appeal for others to join in.

Anyone with information on the whereabouts of 70-year-old Janet Niklaus, is asked to call the main police number, 295-0011, 211 or 911.

Currently Craving: Whole Wheat Spinach and Artichoke Pizza

Ingredients:
1/2 pound whole wheat pizza dough store-bought or homemade (recipe follows)
1/4 cup extra virgin olive oil
3-4 cloves garlic minced or grated
1 tablespoon lemon juice and zest of 1/2 a lemon
1 teaspoon dried basil
Kosher salt and pepper
2 cups fresh baby spinach
1 (12 ounce) jar marinated artichoke hearts, drained
8 ounces fresh mozzarella torn
1/4 cup grated parmesan cheese or crumbled blue cheese
1/2 of a Meyer lemon thinly sliced
2 tablespoons raw pine nuts
Crushed red pepper flakes
Bermy Fresh Basil and Mircogreens

Directions:
Preheat oven to 425 degrees F. Grease a baking sheet with olive oil.
On a lightly floured surface, push/roll the dough out until it is very thin. For SUPER thin pizza, divide the dough into two and roll out. Transfer the dough to the prepared baking sheet. Spread the dough with olive oil. Add the garlic, lemon zest, basil, a pinch each of salt, pepper, and crushed red pepper flakes. Spread evenly over the dough. Add the spinach, artichokes, and cheese. Top with lemon 3-4 lemon slices and the pine nuts. Transfer to the oven and bake 10-15 minutes or until the crust is crisp and the cheese has melted. Remove the pizza from the oven and top with lemon juice, basil and microgreens.
