(Serves 4 with 16g of fibre/serving)

Ingredients
For the bowl:
1 cup dry green or brown lentils, rinsed
3 cups water or low-sodium broth
1 medium sweet potato, diced
2 cups broccoli florets
1 red pepper, chopped
1 small red onion, sliced
2 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
ยฝ tsp cumin
Salt & pepper to taste

For the lemon-tahini drizzle:
2 tbsp tahini
1โ€“2 tbsp warm water (to thin)
Juice of ยฝ lemon
1 small garlic clove, grated
Pinch of salt

Instructions
Cook the lentils:
In a pot, combine lentils and water/broth. Bring to a boil, reduce heat, and simmer for 20โ€“25 minutes until tender. Drain any excess liquid.

Roast the veggies:
Preheat oven to 425ยฐF (220ยฐC).
Spread sweet potato, broccoli, pepper, and onion on a baking sheet.
Toss with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper.
Roast for 20โ€“25 minutes, flipping halfway.

Make the drizzle:
Whisk tahini, lemon juice, garlic, salt, and warm water until smooth.

Assemble:
Divide lentils into bowls, top with roasted veggies, and drizzle with lemon-tahini sauce.
