Ingredients:
Garlic
Tomato paste
Green onions
Beef Broth
Coconut milk
Heavy cream
Cherry tomatoes
Spinach
Gnocchi
Preparation:
- Heat a bit of oil in a large skillet over medium heat.
- Add minced garlic and chopped green onions.
- Stir in the tomato paste and cook for another 2 minutes, allowing it to caramelize slightly for a richer flavor.
- Pour in the beef broth, stirring to combine with the tomato paste and aromatics.
- Add the coconut milk and heavy cream, stirring well to create a smooth sauce.
- Add cherry tomatoes and fresh spinach to the skillet.
- Stir in the uncooked gnocchi directly into the sauce, making sure the gnocchi is submerged.
- Cover the skillet and let the mixture simmer gently for about 10-12 minutes, or until the gnocchi is tender and cooked through, and the sauce has thickened. Stir occasionally to prevent sticking.
- Once the gnocchi is cooked, season the dish with coriander, salt and pepper to taste.
- Serve the creamy gnocchi hot, garnished with additional green onions or freshly grated Parmesan cheese, if desired.
