Another idea for your pesto seasoning: Pesto Turkey Meatballs
Ingredients:
2 tbsp pesto
1 pound ground Turkey
2 tbsp parmesan cheese
1 egg
Spicy? Add 1/2 tsp of red chili flakes
Serve with aiolis.
Alternative: make into patties for the bbq. Another idea, substitute soulvaki mix for pesto and use tzatziki for dipping.

Looking for an easy recipe for your mandolin???
Microwavable Potato Chips!
Using your mandolin, slice a potato, with or without skin and brush each side with olive oil. Spread out each slice on a piece of parchment paper and cook on high in the microwave. Add on 30 seconds increments for crispiness. Serve with ceasar or French onion dips. You could also season your chips with many of the Epicure spices: lemon dill, 3 onion, bbq, red chili flakes.

Here's a "sweet" idea: use sweet potatoes in place of regular ones and serve with the different aiolis.
