Try these grilled veggie skewers, a tasty and blood sugar-friendly option for your next BBQ.
Ingredients:
• Zucchini, bell peppers, cherry tomatoes, and red onions
• 2 tablespoons olive oil
• 1 tablespoon balsamic vinegar
• 1 teaspoon dried oregano
• Salt and pepper to taste
Instructions:
1. Cut vegetables into bite-sized pieces.
2. In a bowl, mix olive oil, balsamic vinegar, oregano, salt, and pepper.
3. Toss vegetables in the marinade and let sit for 30 minutes.
4. Thread vegetables onto skewers and grill for 10-15 minutes, turning occasionally.
