🍂Healing Fall Recipe: Golden Harvest Soup🍂
As the leaves turn and the days grow shorter, a nourishing meal can bring about warmth and healing. This “Golden Harvest Soup” is crafted with immune-supporting ingredients to promote vitality and sustained energy which makes it the perfect recipe for anyone needing a little extra care this fall!
🌿Soup Ingredients:
1 Tbsp Olive Oil
1 Small Onion, Chopped
2 Cloves Of Garlic, Minced
1-inch Piece Of Fresh Ginger, Grated
2 Cups Diced Butternut Squash
2 Carrots, Chopped
1 Apple, Peeled & Chopped
4 Cups Of Low-Sodium Vegetable Broth
½ Tsp Turmeric (Contains anti-inflammatory properties).
Salt & Pepper (To Taste)
Optional: A Splash Of Coconut Milk (Adds a touch of creaminess).
🍲Instructions:
In a large pot, heat olive oil on medium heat.
Gently sauté the onion, garlic and ginger for 2–3 minutes, allowing their aromas to release.
Mix in squash, carrots, apple and turmeric. Cook for 5 minutes.
Pour in the vegetable broth and bring it to a boil.
Reduce heat and simmer for approximately 20 minutes or until the vegetables are tender.
Blend until the ingredients are smooth (Use a blender).
Stir in coconut milk if desired and season with salt and pepper.
💛To Serve:
Add roasted pumpkin seeds, a drizzle of olive oil or even a dash of cinnamon for the perfect fall touch!
