If the lilacs are blooming in your neighborhood, this is the recipe for you 🌸
This lilac peach water kefir soda tastes like that exact moment spring slips into summer.
LILAC PEACH WATER KEFIR SODA
Ingredients:
🌸4 cups first ferment water kefir
🌸1/2 cup lilac simple syrup
🌸1 tbsp lemon juice
🌸1/4 cup fresh or frozen peach chunks
Lilac syrup:
🌸 2 cups lilac florets
🌸 1 tbsp cane sugar
🌸 1/2 cup water
Instructions:
1️⃣Make your first ferment and let sit 24–48 hrs in a warm spot.
2️⃣For syrup: heat water + sugar until dissolved and just simmering. Remove from heat, cool slightly, then add rinsed lilac florets. Steep 1–2 hrs, then strain.
3️⃣Add syrup, lemon juice, and peaches to a swing-top bottle. Top with first ferment, seal, and let second ferment 24 hrs at room temp.
4️⃣Open slowly, strain (if desired), and enjoy chilled.
