GUESS WHO’S BACK, BACK AGAIN 😏⁣⁣

Yup that’s right! My first blog post in a YEAR! If I’m being completely honest, 2021 was a tough year for me. I know that the majority of people can relate to this. It was full of sucker punches & uppercuts. Big losses & health concerns while trying to get my photography business off the ground. Lots of tears, laughter, grief & heartache. I learned a lot, grew a lot and feel like I’m a stronger person because of it.⁣⁣

BUT I am feeling inspired and ready to get back at it, for my own mental health if nothing else, because being creative is something that genuinely brings me joy 💛⁣⁣

EASY Chocolate PB Easter Eggs!🐣

Ok guys, I have been pretty MIA on this account lately. Trust me, I want to be around more than I am, it’s definitely a goal of mine! Lately I have been super busy with my lifestyle photography and still work at the hospital part time. Sometimes something has to give, unfortunately it means neglecting this account much more that I want to 🙈. I hope everyone is having a great long weekend! And I hope that I can keep getting healthy recipes out to all your beautiful humans 🙃✌🏽

HOW TO MAKE:
• 2/3 cup creamy peanut butter
• 2 tbsp honey or maple syrup
• 1/8 tsp sea salt
• 3 tbsp coconut flour

CHOCOLATE COATING:
• 1 cup chocolate chips
• 1/2 tbsp coconut oil

VEGAN TOFU PEANUT NOODLE STIR FRY🥢

This dish is packed pull of veggies + protein and has a delicious creamy peanut sauce! You can easily swap out the tofu for some chicken, beef or prawns OR swap out the veg if you have other favourites. Such a versatile dish that is full of clean eating ingredients.

Maybe one of my favourite flavour combos around! Who wouldn't like a muffin that tastes like apple pie??⁠

You will need:⁠

2 eggs⁠
1/3 cup melted coconut oil⁠
2 tbsp maple syrup⁠
1 tbsp apple cider vinegar⁠
1 tsp vanilla⁠
1 granny smith apple grated⁠
1/3 cup coconut sugar⁠
2 1/2 cups packed almond flour⁠
1 tbsp cinnamon⁠
2 tsp baking powder⁠
1/4 tsp nutmeg⁠
pinch sea salt⁠

I have made these pancakes countless times. Pretty much every time I have ripe bananas kicking around the house, I like to make these. These pancakes are SO easy to make, are SO fluffy & flavourful and you don't have to feel bad about eating them! I love to make a big ol' batch of these so I have leftovers to freeze. I'll pop a couple into the toaster when I want a quick breakfast or snack!⁠

Vegan Apple Spice Oatmeal Crumble is HERE!!💃🏻⁠

Do you call it apple CRUMBLE or apple CRISP???🍏⁠

I'm being completely honest when I say that this is hands down my NEW FAV dessert. This apple crumble comes with a chewy oatmeal crust on the bottom, a caramel-y, cinnamon-y, slightly sweet apple pie filling and a crunchy oatmeal topping. This bad boy is gluten free, dairy free and refined sugar free! A clean, plant based dessert that the whole family will love!⁠

Also.. if it matters.. I had 3 servings of this in one day🙈. You can have dessert after breakfast, lunch & dinner, right??⁠

TOFU PEANUT NOODLE STIR FRY!!⁠

Who doesn't love a good noodle stir fry! This is definitely one of my favourite meals to make all year round. It is packed full of veggies + protein and ohhh my this peanut sauce is SO delicious!! You can easily sub out the tofu for chicken, prawns or pork or keep it plant based! Enjoy friends :)⁠

PUMPKIN SPICE LATTE! 🧡⁣

If your a granny like me and love drinking warm beverages all fall and winter.. this recipe is for you!!⁣ 👵🏻

Skip the store bought drinks filled with refined sugars, artificial colours & flavours and make your own at home! It really is SO easy to do. ⁣

HOW TO MAKE:⁣
• 1 cup steamed/heated dairy free milk (I used coconut)⁣
• 1/3 cup boiling water⁣
• 1/4 cup pumpkin purée⁣
• 2 tbsp marine collagen⁣
• 1 1/2 tbsp coconut oil or coconut butter⁣
• 1/2 tsp cinnamon ⁣
• 1/8 tsp clove powder⁣
• 1 tbsp maple syrup or honey (optional)⁣

** blend all of the ingredients together and voila, you just made a delicious homemade pumpkin spice latte!⁣

Warm Chia Breakfast Pudding is here!! Chocolate Peanut Butter to be exact 😏

This recipe is SO quick & easy to make with minimal, clean ingredients. This recipe is low carb and paleo + vegan friendly!⁣

INGREDIENTS:⁣
• 1 cup macadamia nut milk (or nut milk of choice)⁣
• 3 tbsp chia seeds⁣
• 2 tbsp natural PB⁣
• 1 1/2 tbsp cacao powder ⁣
• 1 tbsp maple syrup (optional)⁣

HOW TO MAKE:⁣
1. Pour the nut milk into a small pot and turn onto medium heat. Now add in 2 tbsp of peanut butter and whisk until it has dissolved into the milk.⁣
2. Add 3 tbsp of chia seeds to the milk, give it a whisk. Once the mixture comes to a simmer, turn the heat onto low. Simmer for 2-3 minutes then stir in the cacao powder and remove from the heat. Stir in the maple syrup if you want to add a little sweetness or drizzle on top of your bowl. ⁣
3. Top with your fav ingredients like banana, fresh berries, coconut yogurt, cacao nibs or chocolate chips, toasted coconut, peanut butter and maple syrup! ⁣

Paleo Chicken Strips with Creamy Garlic Dip! ⁣

I am so excited to finally share this recipe! I have been making these bad boys over the last few months and trust me, they do not disappoint! This is my go to meal if I’m craving something “unhealthy”. These chicken strips are gluten free, grain free & dairy free, but are SO flavourful, crispy & juicy.⁣

What do you call them?? ⁣
Strips, tenders or fingers?? I’m so torn 🙈⁣
