A perfect way to recognize the International Day of the Potato. This "potato casserole" would make a wonderful side dish for dinner this evening and help one to warm up on a damp day!
As Islanders, we are keenly aware of the value of potatoes, and they have long been a staple of many meals.
The following recipe for hash brown casserole, a.k.a. “funeral potatoes” closely resembles the one my grandmother would make for our family. (She often included a bit of diced green pepper – and if it was small enough, Allison didn’t really notice!)
Commonly served as comfort food at a gathering after a funeral or as part of a meal delivered to grieving family, the recipe has been nicknamed “funeral potatoes”.
Perfect as a side dish for brunch or dinner, this creamy and crunchy hash brown casserole always fits the bill.
