This Nutrition Month, the CKHA dietitians and nutrition services, want to share simple and nutritious recipes.

This weeks’ recipe is a Power Bowl - an easy and flexible way to satisfy hunger, made with almost any ingredients you have on hand. Bonus: it's a great way to save time and reduce food waste.

1. Start with Veggies & Fruit: Fill your bowl with color (carrots, peppers, or leafy greens).
2. Add a Whole Grain: Try barley, quinoa, or even leftover pasta.
3. Include Protein: Mix animal and plant-based sources like eggs, cheese, or black beans.
4. Sprinkle Toppings: Add fresh herbs, olives, or nuts for extra crunch.
5. Drizzle Dressing: Try a simple Lemony Tahini Yogurt dressing (recipe below!)

Lemony Tahini Yogurt Dressing:
¼ cup plain yogurt
2 Tbsp tahini
1 clove minced garlic + 2 Tbsp lemon juice + pinch of salt

This wasn't just about gathering data, it was about ensuring that every person who stays with us at CKHA is protected and cared for with the highest standards.

CKHA is partnering with the Southwestern Ontario Stroke Network (SWOSN) to build a better roadmap for post-stroke recovery—and your lived experience is the key to getting it right. Join us to help create the care you want to see.

Yesterday was World Delirium Awareness Day and CKHA partnered with Alzheimer Society of Chatham-Kent to host an interactive awareness booth! 🧠

Delirium affects up to 75% of elderly patients in hospital, but together, we can reduce that risk.

3 Simple Ways to Help Prevent Delirium:
1️⃣Stay Active: Keep blinds open during the day and sit up for all meals.
2️⃣Stay Connected: Ensure glasses, hearing aids, and dentures are worn daily.
3️⃣Stay Engaged: Bring in puzzles, books, or favorite foods from home.

This Nutrition Month, the CKHA dietitians and nutrition services, want to share simple and nutritious recipes. This weeks' recipe is Black Bean Sheet Pan Quesadillas!

This black bean quesadilla is simple to make, cooks on a sheet pan for quick dinner clean up and includes a plant-based protein - black beans! Plant-based proteins are a great way to consume protein and can help to reduce your risk of chronic disease (i.e., heart disease).

INGREDIENTS:
Yogurt Lime Crema:
½ cup (125 mL) plain 2% Greek Yogurt
½ tsp (2 mL) lime zest
1 tbsp (15 mL) fresh lime juice
1 tbsp (15 mL) minced jalapeño or to taste
1 small clove garlic, minced
Pinch salt

Quesadillas:
4 small whole wheat tortillas (approx. 7-inches/18 cm)
½ tsp (2 mL) canola oil
1 ½ cups (375 mL) canned drained & rinsed black beans
½ cup (125 mL) diced sweet red pepper
2 green onions, thinly sliced
½ tsp (2 mL) lime zest
1 tbsp (15 mL) fresh lime juice
1 ½ tbsp (22 mL) minced jalapeño or to taste
1 small garlic, minced
¼ tsp (1 mL) each chili powder and ground cumin
½ cup (125 mL) each shredded Mozzarella & Cheddar cheese

PREPARATION:
1. Yogurt Lime Crema: In small bowl, combine
yogurt, lime zest and juice, jalapeño, garlic, and
salt. Cover and refrigerate until ready to serve.

2. Quesadilla: Preheat oven to 425°F (220°C). Brush
one side of each tortilla with oil; place oiled side
down on large nonstick baking sheet.

3. In medium bowl, with fork or potato masher
coarsely mash half of the beans, stir in remaining
beans, red pepper, onions, lime zest and juice,
jalapeño, garlic, chili powder and cumin.

4. Divide Mozzarella cheese over one half of each
tortilla. Top with bean mixture and Cheddar
cheese, dividing equally. Fold unfilled half of
tortilla over bean mixture; press together firmly.

Bake for 8 minutes. Flip; bake for 6 minutes or
until crisp. Cut in wedges. Serve with Lime Crema.

Last week, we were honored to host Dr. Snaiderman from the Toronto Rehabilitation Institute for an insightful session on post-stroke mood disorders.

Attendees from across Chatham-Kent came together as an interdisciplinary team to deepen their expertise in this critical aspect of recovery.

We love hosting these educational sessions throughout the year. Staying at the forefront of medical education allows us to better serve our community and ensure we are always delivering the safest, highest-quality care to our patients.
