“Progress isn’t about being perfect — it’s about showing up, staying consistent, and trusting the process even when it’s hard.”

Avocado Toast with Poached Eggs & Greens

Ingredients (Serves 1):
• 1 slice whole grain or sprouted bread
• ½ ripe avocado, mashed
• 2 eggs (poached or soft-boiled)
• 1 cup mixed greens (arugula, spinach, or spring mix)
• 1 tsp olive oil
• 1 tsp balsamic vinegar
• Salt & pepper to taste
• Optional: chili flakes, lemon juice, or h**p seeds for topping

Instructions:
1. Toast the bread to your liking.
2. In a small bowl, toss the greens with olive oil and balsamic. Set aside.
3. Poach eggs or cook them soft-boiled.
4. Spread mashed avocado on the toast, season with salt, pepper, and a squeeze of lemon if you like.
5. Top with poached eggs and a handful of greens.
6. Sprinkle chili flakes or h**p seeds for an extra nutrient punch!
