My sister knows a secret.

If you want a giant platter of fresh veggies to be devoured... present it with a great dip! She brings it to the beach, on road trips, Thanksgiving, Christmas and cousin sleepovers... it never disappoints.

This is an old family favourite; it's quick, easy and a healthy addition to the buffet table.

The recipe calls for yogurt, we usually opt for grass fed plain Greek yogurt so it's nice and thick. Today I was out of Greek style so it was a bit on the runny side but it still went fast ;)

I have used this recipe with a cashew cream base for a dairy free, vegan option that is quite good if not exactly the same. See below for directions.

I brought some today for a small potluck with friends and managed to grab a quick picture to share with you :)

Dilly Dip:
1 3/4 cup yogurt
1/4 cup mayonaise
2 tablespoons finely chopped parsley - stems removed
OR 1 tablespoon dehydrated parsley
1 tablespoon dehydrated onion flakes
1 teaspoon himalayan salt
1 1/2 teaspoons fresh or dehydrated dill

Mix altogether and chill for about an hour before serving.

✨Enjoy!✨

Cashew version:
Soak 1 cup raw cashews in 2-3 cups water and a dash of salt for 4 hours. Drain the water and add 1/4 cup water to cashews. Blend in high speed blender until creamy adding water until desired consistency is reached. Pour into a mixing bowl and follow above directions. Keep in mind it will get a slightly thicker once the dehydrated onions are added.

One of my favourite (sneaky!) ways to keep my family healthy and hydrated as they play outside ALL DAY is by having homemade popsicles on hand.

I don't mind if my kiddos have 5 a day!

Free from all the usual junk found in normal frozen treats, these provide great electrolytes and clean fuel for them to burn off as they run/rollerblade/bike laps around me.

Lime and pineapple were a big hit yesterday, today it's cherry and lemon 😋

I remembered to take notes for the pineapple one, and a picture of the cherry... that's success in my books 😎

Be sure to blend until smooth. I use a Vitamix which makes a big difference. This might seem like a lot of "sweet", it's such a great option when compared to the run-of-the-mill popsicle. Also, the spinach and h**p hearts balance things out 😉 A few mint leaves would be divine in this, but I'm using what I have and we're all out of mint. Also, the lime could definitely be subbed with lemon. Leave a little of the lemon rind on; it provides great cleansing properties and a nice kick of lemon!

Pineapple Lime Popsicles

1/4 cup h**p hearts
1/2 - 1 lime peeled
1 cup frozen spinach (that's SO much if you measured it fresh)
2-4 dates
2 1/2 cups frozen pineapple
1/4 teaspoon himalayan salt
1/2 cup fresh/frozen cranberries
7 cups water

Blend until smooth, pour into popsicle molds and freeze. It usually takes about 4 hours in my fridge freezer and about 2 hours in my deep freeze so it helps to be on the ball and make big batches the night before or around breakfast time🙂

"Gorilla food!" Said the 8 year old before digging in. (One of his life goals is to grow big and strong like a gorilla and knows they're vegetarian 💪😆 )

"Thank you Mom! It looks delicious!" Said the 12 year old as she snuck a piece walking by.

This is one of my favourite summer meals, there is SO much energy and nutrition packed into this bowl and I don't feel weighed down or bloated after eating. Just as important is the flavour combination... I pout a little if I'm missing a key ingredient or two - it's the synergy that makes this a fav.

I usually love onions in my salads, yet in this one I keep them out. They overpower things a bit.

Here's what's in it and the amounts that fed the four of us; we are ALL growing big strong muscles 😉:

1/2 head each- Red and green curly lettuce
1 large Cucumber
5 radishes
10-15 small orange tomatoes ( I have no idea what their official name is - but they're cute and small and bursting with flavour. Red cherry or any other tomato works too - I just like to mix up the colors)
2 avocadoes
7 eggs (I try to keep the yolk softer...but I was distracted😁)
2 baby red bell peppers
1/4 cup h**p hearts
3-5 basil basil leaves sliced thinly (such a treat!)

Dressing:
(per serving - no pre-mixing necessary, I drizzled it directly over the salad)

1-2 Tablespoons Olive Oil
1 Tablespoon Balsamic Vinegar
1/16 teaspoon Himalayan salt
1/16 teaspoon freshly ground pepper

Enjoy!!

Can you tell mine is a bit bigger? I made them in order of age... oldest at the top, youngest at the bottom. The oldest child loves tomatoes, the youngest loves radishes so I alter the salads a bit knowing their preferences. BUT everyone gets a bit of everything 😉😋😋

Sometimes I add fatty foods to my smoothies like coconut meat, avocado or nuts; they certainly make for a luscious drink! If I over do it though, they can hurt my stomach, too much fat at once can do that.

This morning I wanted refreshing and replenishing so today’s post-workout smoothie was geared for just that! It has just enough fat to make sure your body can absorb the fat soluble vitamins and is nice and tart with a hint of sweet. If you prefer sweeter or are sharing with pickier little ones, add 1/2 banana or a date.

Please remember you don’t have to wait until you’ve done a workout - your body (and emotional state!) will thank you regardless😉

High in iron, magnesium, calcium, phosphorous, folate, zinc, copper, manganese, vitamins A, K and C… this packs a serious nutritional punch!

Cleansing and Balancing Parsley Smoothie

2 tablespoons h**p hearts
1 lemon - deseeded with 1/3 rind left on
1 lime - deseeded and peeled
1 tablespoon fresh mint leaves
3 tablespoons fresh/frozen cranberries
3/4 cup fresh/frozen pineapple
1/2 teaspoon vanilla
1/16 teaspoon sea salt
2 cups water

Place ingredients in a high powered blender for 45-60 seconds and enjoy!

Have you ever written a recipe before trying it? I did that today, and (YAY!) it turned out fantastic!

Why would I write it first?

Because I knew what I wanted to feed my body, I've been doing extra physical activity and was feeling a bit depleted, so I catered the recipe to fill the gaps. I've made enough mistakes and have gagged through enough flops to have a pretty good idea what ratios would hit the spot.

What was I hoping to add to my nutritional intake today?

Bone building nutrients (which are also teeth building nutrients 😉), electrolytes, fibre and antioxidants. I wanted the ache in my head to go away, the tension in my muscles to ease and darn it, I wanted it to taste good too!
I'm a big promoter of REAL FOOD; most supplements and powders just don't do it for me so I often find myself in the kitchen scheming ways to enjoy my "medicine" whole foods style 😎.
Today I made a creation that wound up tasting and feeling a lot like pudding. The really creamy kind - minus the dairy!

I should mention that I've tried avocado pudding before... and it's not been my thing. I haven't ever eaten it where the underlying "avocado" taste is truly masked (though maybe the frozen avocado has less flavour?). This recipe did it for me, FINALLY! I won't waste the frozen bag of avocado chunks I bought on a whim 🙃😁

You could add a teaspoon of cinnamon for a punch, I bet it would be great.

Creamy Chocolate Avocado pudding

1 cup water
1 cup cashews (preferably raw)
1/2 cup medjool dates - pitted (about 9 dates)
1 teaspoon vanilla
1/2 cup cocoa
1 - 1 1/2 cups frozen avocado
1/8 teaspoon sea salt

Place ingredients in a blender or food processor and process until smooth.

I soaked the dates and cashews in the water for about 10 minutes before blending to soften them a bit and ensure a nice creamy result 😋😋
*This delicious treat is a great source of magnesium (required for every metabolic function in your body!), iron, phosphorous, copper, fibre... your body will thank you

Like the rest of the world, we are staying home as much as possible. Grocery shopping happens every few weeks for me, and in the meantime we want more snacks than usual! I was craving chocolate and only have cacao in the house: raw brownies to the rescue 😃 This was on our counter today - fair game for anyone to help themselves. Full of antioxidants and zero guilt ingredients😉 Today I added 2 tablespoons of coconut oil because it seemed like a good idea. If you don't have dates - use honey or maple syrup; they're just as yummy 😋

Raw Brownies

1 cup pecans or almonds
1 cup medjool dates - pitted
5 tablespoons cacao
4 tablespoons shredded unsweetened coconut
1/4 teaspoon himalayan salt
1/4 teaspoon vanilla

Place pecans into food processor and pulse until they are crumbly. Add dates and pulse until just combined. Add the rest of the ingredients and process until you see tiny bits but not until the mixture is “buttery”. Pour mixture into a cake pan and press firmly and evenly. Refrigerate for an hour before cutting into pieces. Enjoy!

My friend Michelle Miller reminded me of these recently… so naturally we raced to the kitchen for some Home Ec. (is it even called that anymore?!) but my kids ate the WHOLE BATCH before I could snap a picture.
Yes.
They are THAT good.
And.
No, I don’t really mind them eating the whole batch because these are pretty nourishing and actually boost their immune systems.
They are mixing up some chocolate peanut butter cups as I type… hopefully I’ll get a great picture of those to share :)
