Ever feel like you're too busy to eat breakfast?
Try this recipe for gluten free, dairy free granola bars. Yummy.
Set the oven to350.
1/2 cup unsweetened shredded coconut(loosely packed)
2cups of gluten free rolled oats
1 cup sliced almonds
Mix well then place on cookie sheet, bake for 10-12mins until lightly brown.
1/2 cup flaxmeal(not seed)
Pour into a bowl adding flax meal while still warm.
1cup honey, 1 1/2 tsp gluten free vanilla, 1/4 tsp. cinnamon, 1/4 tsp Celtic sea salt
Add warmed honey, people with diabetes should use agave syrup, gluten free vanilla and cinnamon, salt and mix well
Then add these other ingredients and mix really well:
1/2 cup chopped dried apricots
1/2cup dried chopped cranberries
1/2 cup raisins
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
Prepare a lined 8 by 12 baking dish oiled and lined with parchment paper
Press mixture into dish, really press(HARD). I spread cling wrap across the top of the dish and press with a potato masher(lol, works for me)
Remove the cling wrap and bake at 350 for 20-25 mins. If your going to press it with your hands make sure their really wet or the mix will stick to your fingers.
Do not cut bars until completely cooled or they will crumble.
Once cut unto bars, wrap them in cling wrap, they freeze well too. Just grab and go.
Tip: apricots are one of nature's perfect foods, (vitamins A,C,E, potassium, iron, beta carotene and fibre). All great for healthy weight loss.
