Come cook with me! Let's make Coconut Chia Energy Balls from my newest cookbook, Healthy Gut Happy You!

You'll notice that in my pictures, I substituted the chia and h**p seeds for sesame seeds. This is due to allergies. Still tastes delicious either way!

You'll need:
1 cup shredded coconut
2 tbsp each chia, h**p and ground flax seeds
1/2 cup almond butter
1 tsp vanilla extract
1/4 cup mini dark chocolate chips
2 tbsp honey or pure maple syrup (not pancake syrup)
Pinch of sea salt.

As Spoonies, we’re often told to ā€œcelebrate the big wins,ā€ but what about the quiet victories?

Getting out of bed.
Drinking a warm cup of tea.
Feeling the sun on your face.
Laughing at a silly meme.
Having the energy to dance — even if it’s just in your chair.

These small happies matter just as much (if not more) than the big celebrations. When your energy is limited, mindset becomes everything. Choosing to find joy in the everyday, in the ordinary, in the stillness — that’s a radical act of self-love.

You don’t need a big moment to feel proud of yourself. You don’t need to ā€œachieveā€ something to be worthy of celebration. You are already enough.

I visualize Phil, my Fibro Monster, as a silly cartoon monster who is not well-behaved and often has temper tantrums. This helps to make him less scary, thereby taking away his power. Fibromyalgia flares are often scary because we don't know their duration or intensity. So anything we can do to take away its power is one more tool to manage it.

I encourage you to make your monster as silly and ridiculous as possible.

The long, sunny days of summer are finally here, and while we haven't had any real heat waves to speak of (knock on Extremely hard wood!), staying hydrated is still very important.

But let's be real, plain water is BoRiNg!!! How can we make staying hydrated more appealing? Let's take a look!

1. Frozen fruits. I love adding frozen fruit to my water. There are always some frozen lemon slices in my water, but every once in a while, I've been known to go a little crazy and toss some frozen berries, pineapple, mango, or even some fresh mint leaves from my garden.

2. Juices. I am not the biggest proponent of juicing, because you lose the fibre while concentrating the sugar, but with all the beautifully delicious fruits ripening now, how can you resist? Juicing is a great way to also sneak some veggies in for those picky eaters! Apples, carrots, ginger, lemons, and pears make a delicious, refreshing combination.

3. Smoothies. Made at home, smoothies are a great way to get many gut-healthy fruits and veggies into you! Commercially made smoothies are loaded with calories, making it at home allows you to know the ingredients. My favourite smoothie is pineapples, mangoes, peaches, almond milk and coconut yogurt.

4. Popsicles or freezies. Summer screams for frozen treats, and you can make some delicious homemade popsicles. Combine your favourite sliced fruits with coconut water and pour into your favourite mould for a tasty and nutritious treat.

5. Fruits and Veggies. Yup, you can eat yourself hydrated! Think melons, cucumbers, berries, celery, and tomatoes - anything juicy is going to hydrate you!
