New York. So amazing. So much energy. Loved every minute of being there.

Places visited: Brooklyn (DT & Dumbo), Financial District, Tribeca, Lower East side, Greenwich, East Village, Chelsea, SoHo, Midtown, Hells Kitchen, Upper East & West, and Harlem.

Transportation: Train from/to NJ airport to Penn station, Buses, Subway, WALKING (like 14-15 miles/23-24 kils a day!). Meggan navigated using the Transit app (same one that we use here) with no problems. Definitely recommend using the app because the transit signage is not great. That said, anytime we were confused there was always someone willing to help. You can buy a metro card or use Apple Pay or a CC. Pay per ride is $3 or a week pass for $34. At 12 subway trips in a week, you'll cap out at the same price as a 7-day MetroCard. Train to/from NJ airport to Penn station was $16. Subway & buses were all clean, buses have usb chargers, and felt completely safe (even late at night). Staton Island ferry (good Statue of Liberty view) is FREE.

Hotel: stayed at the Evelyn Hotel near Madison Square Park and loved it! All staff were super helpful. It was clean and good size room. AC, WiFi, shower all good. Wonderful workout facility. Fantastic location! Close to everything but also far enough away that noise isn’t an issue at night.

Our experience was that NYers do not deserve their reputation of being rude. Everyone was so kind and nice and I’m not just referring to service workers paid to be nice. Locals were too and seemed eager to talk about their city when you showed interest. Just don’t be dumb and stop in the middle of the sidewalk. Walk how you drive and move out of the way if you need to stop. Honking is non stop and seems random lol. Watch out for E-bike riders because they follow zero traffic rules.

The city was much cleaner than I thought it would be. Honestly impressively so. There’s garbage out on the streets at night because that’s when pick up is.

If you can, check out the Brooklyn Bridge at night. FAR less busy and the city lights are beautiful.

Cant stress enough how important GOOD shoes are. It’ll make or break your trip. If you go in the summer be prepared for it to feel 10 degrees hotter than the actual temp with the humidity.

There are dogs (and dog parks) everywhere and it’s just great! Much preferred the calm of Riverside park (upper east side/harlem) to Central Park but of course central is great too!

Also was surprisingly not as expensive as I thought it would be (other than our 1$ being worth nothing) which is great for me cuz I also have a Mom/Son trip to plan.

Just like how the love a parent has for their child is unexplainable,
The depth of pain that comes from losing someone you love, also cannot be captured in words.
And on days like this, that pain hurts a little more.

You were my person Dad. The person who just got me. Understood me.
That person who knew what I needed, what I was thinking or feeling, without me ever having to say a word.
The person who taught me that I was enough and loved, simply by existing.
The person who always made me feel safe.

I’ve accepted that I’ll never feel completely better, because there’s no life without you that’s better. That I’ll always miss you. That I’ll never be the same, because a part of me died that day too.

But I also know that you would never want me to stop living. That you would want me to take this pain and turn it into something positive.
To live life knowing how fragile it is, so as to never take a second with the people you love for granted. To make sure to see the little things as much as the big ones. To take in all that life has to offer.

And that is the thing about living life as you did, for even without a physical presence, you’re still teaching me all about it.

Happy Heavenly Father Day,
I would choose you to be my Dad in every lifetime. Again and again.

To the world it has been 365 days, but to me it feels like yesterday.
1 day, 1 month, 1 year, the hole in my heart remains. And I know it always will.
There are some wounds that are so deep time can’t heal them.
You just learn how to live with that pain being a part of you.
Knowing that you are lucky to have something hurt so much because it means you had the opportunity to experience love in the same capacity. To truly connect and have made beautiful memories with another person.

Pretty much use this same simple stir fry sauce recipe every time I make it:

2 Tbsp sesame oil
4 Tbsp reduced-sodium tamari (or soy sauce if not GF)
3 Tbsp maple syrup
2 Tbsp vegan butter
2 Tbsp lime juice
1 Veggie bouillon cube
S&P to taste

(You can double or triple measurements based on the size of stir fry you’re making. If sauce isn’t thickening mix in a few tsp cornstarch)

Optional: chilli flakes, sesame seeds, cashews, almond slivers, lemon pepper

Do the sock curls 🧦👩🏼‍🦱

All you need is a pair(or 2)of long tube socks.
Make sure your hair is just damp (not wet!)

1)Separate hair into two or four equal sections. Hold them separate using elastics while completing the rest of the steps, if desired. If you have thick hair—or just a lot of hair—four sections might result in better curls.

2)Secure one sock at the top of your head with a claw clip or bobby pins. Line it up length-wise with one of the sections.

3)Separate the section into two equal halves on either side of the sock. Grab one piece of hair from one side (starting near the top of the sock and closest to your crown and roots). Proceed to fold the piece of hair over the sock, followed by folding a piece from the other side over the sock. You’ll be forming an X-shaped design that feels almost like you’re braiding.

4)Continue to add more pieces of hair from each side as you wrap it around the sock each time. It should be small pieces each time, not huge chunks. This is key to getting the ringlets later on.
When you’ve made it all the way down to your ends, secure the hair and sock with a hair elastic or silk scrunchie.
Repeat with other sections and socks.

Go to sleep😴

Always having a few simple staples prepped and ready to heat up are what saves me when my schedule gets extra crazy. Makes it so easy to snack or throw a 5 min lunch or dinner together.
Yesterday I had 45 min in between work and a school seminar and still managed to get this first bowl together (to eat during the lecture lol) and a 30 min walk with Meggan.

Every weekend I make a few of these sides and we’re set for the week ahead:

Rice (usually coconut)
Baked or roasted potatoes
Edamame
Steamed/cooked veggies (usually broccoli and carrots)
Quinoa
Rice noodles
Air fried tofu
Black beans, chickpeas washed and drained or refried beans

Best Chilli = adding oregano🌿& dried chilli pepper seeds🌶️& using a slow cooker⏲️
Trust🙋🏼‍♀️

Ingredients:

-3 tsp olive oil (to brush inside slow cooker)
- 1 large yellow onion, diced
- 3 carrots peeled, sliced
- 2 C frozen or fresh corn
- 6 garlic cloves, chopped finely
- 3 dried chilli pepper seeds,(or add diced membranes too for more heat)
- 1/2 C tomato paste
- 2 tablespoons homemade chili powder
- 1 tablespoon ground cumin
- 1 ½ teaspoons paprika
- 1 teaspoon harissa
- 3 tablespoon oregano (or Italian seasoning)
- 2 cups vegetable broth
- 2 (15-ounce/425g) cans of kidney beans, drained and rinsed
- 1 (15-ounce/425g) can of navy beans (or other small white beans, eg. Lima), drained and rinsed
- 1 (15-ounce/424g) can of black beans
- 3 tablespoons tamari or soy sauce
- 1 (28-ounce/800g) can whole tomatoes (include juices)
- 1 (28-ounce/800g) can diced tomatoes (include juices)
- 1 handful of cherry/grape tomatoes
- Freshly cracked black pepper and Himalayan salt to taste
- 1 to 1 1/2 tablespoons freshly squeezed lime juice
- 1 teaspoon red wine vinegar
- 3 tablespoons corn starch (optional to thicken, can stir in near end of cooking time)

Optional: cilantro leaves for topping

- gently combine all ingredients in a large slow cooker and cook 4 hrs on high heat and low heat for 2-3 more hours (or on low heat for 8 hrs).

Walk & “Read.” Best 3 books I read in 2023.
My Dad and I had an ongoing debate about whether audiobooks are “reading” or not😭and… they are lol.

Ultra Processed People
This book will absolutely change how you think about food. What it is, the industry, the politics that surround food accessibility and everything we consume, and how manipulation and advertising impact our food choices. The author is extremely entertaining in presenting food science, facts, and personal experimentation with food. Conversations with his brother and illustration of food consumption within the authors own family adds authenticity, objectivity and realism that is often lacking in writing about nutrition, diet and food. Highly recommend this book to anyone who eats food lol. *note, a podcast sharing similar sentiments expressed in this book is episode 155 with Dr. Robert Lustig

The Beauty of What Remains
Losing my Dad has been the most painful experience I’ve had to endure in my life this far. He was my person. An amazing father growing up and my best friend as an adult. Although I know I’ll never be able to make sense of such a tremendous loss, this book had an incredible way of giving meaning to death and mortality. It’s incredibly heartfelt and authentically written. Leder manages to convey hope and even humour in his writing. I also found comfort in a person who has so much experience dealing with death sharing their personal struggles with grief. In my career I’ve seen so much illness and death that I thought I’d deal with my Dad dying “better” than I have. Knowing that there is nothing that can prepare you for the emotions that accompany personal loss of a loved one was validating. This book is a beautiful read for everyone and particularly so for those coping with illness and death.

I found this book fascinating, and so important to forming a basic grasp and understanding of the scope and scale of CURRENT AI technology. The author discusses AI implications (positive and negative) and argues the large scale need for ethics collaboration, containment and questioning.
