Curry! This is one of those foods that everyone in the family loves. It’s funny that I didn’t cook curry for the family for probably 10 years in a row. Now I remember to make it one of the meals in the usual rotation. Mine not be as epic as Mrs. Chen’s famous chicken curry, but it is delicious and easy all the same and easy to do with ingredients you probably already have at home.

Remember that you can add Nuplus to even savory meals. I just add a packet of one of the plainer flavors at the end of cooking to help thicken and add all those Chinese super herbs to the family meal.

It’s National peanut butter lovers day and I love this easy no-bake PB treat!

Just mix 1 cup of peanut butter with 3/4 cup almond flour, about 1/4 cup maple syrup, 1/2 tsp vanilla, a sprinkle of salt, and a packet of Sunrider Nuplus. I also like to add a few drops of stevia based sweetener Sunnydew to make it sweeter and you can reduce the maple syrup that way if you would like. It helps to slightly warm the mixture to mix since it will be very thick. Pat it down in a small pan (A loaf pan works great!)

For the topping take 4 ounces of dark chocolate and melt it with 2 tablespoons of creamy peanut butter and a sprinkle of salt. Add more drops of Sunnydew as desired. Pour and spread the chocolate on top then chill in the fridge until set.

It was a muffin morning! I had 3 really ripe bananas in my fruit bowl that were calling to me and we made these banana muffins with NuPlus. I used the recipe that I posted on December 22 and you know that I can’t help but change it up a bit! This time I wanted to use the rest of my dates as the sweetener so I soaked the dates in the wet ingredients. I also doubled the amount of flaxseed I used because I just love it! I also didn’t have any whole wheat flour like I like usually like to use and I didn’t want to grind up more from my whole wheat berries because it was too early in the morning for all that noise. (My neighbors will thank me; our wheat grinder is extremely loud- I usually wear ear protection while using it!!!)

If you don’t have NuPlus, you can just increase the amount of flour or oatmeal by about ½ cup.

1 cup of old fashioned oats (I pulverize them in a blender to make oat flour)
1 cup flour (scant) I added a little less flour this time and more flaxseed
3 packets Sunrider NuPlus (I used simply herbs)
2 tsp baking powder
1 tsp baking soda
½ tsp salt
2 T flax seed
2 Tsp cinnamon (just realized that I forgot this yesterday but it was still so delicious without!)

Mix dry ingredients. I usually just mix it all in a blender.

Wet ingredients
A handful of dates (about ¾ cup)
½ cup milk or plant based milk
2 Tablespoons oil, coconut butter, or melted butter
2 eggs
1 tsp vanilla
3 ripe bananas
1 packet Fortune Delight (Lemon flavor is so delicious in this!)
3 squeezes Sunnydew (or as needed)

Heat up milk and coconut oil or butter together and pour over the dates to soften them in a blender. Wait about 5-10 minutes and then grind them up to a paste with the bananas. Add the rest of the wet ingredients and mix well. Add to the dry ingredients and mix just until combined. Feel free to add chocolate chips or nuts. Bake about 20 minutes at 350 degrees or until golden brown and done throughout.

This is so easy to make and tastes delicious.  Serve it with your favorite fruit
