ginger bread protein muffins
Oven at 385
2 muffin tins sprayed with Pam
Dry mix
4 cups gluten free oat flour
2 heaping tablespoons of baking powder
1 teaspoon sea salt
1/4 cup of powdered ginger
1/2 teaspoons of cinnamon
1/2 teaspoons nutmeg
1/2 cloves
4 scoops of cinnamon protein powder
Sift together
Wet ingredients in separate bowl
1/2 cup of blackstrap molasses
1/3 cup of brown sugar stevia
1/2 cup unsweetened applesauce
1/3 cup avocado oil
4 large eggs
1 cup of high protein milk
Mix together than add to dry ingredients and mix only until large lumps are mixed - don’t over mix. Add to muffin pans immediately and bake for 15 min or until tops are firm to the touch.
