Looking for a quick and easy salad that doubles as a full meal?

Or what about something to take to a summer BBQ or as your contribution to dinner with friends?

This is it!!

This salad will do well in the refrigerator overnight, so it's great for lunch the next day!

Add more or less of the cucumber, tomatoes and olives depending on your taste - personally, I would add in more olives ๐Ÿ˜€

If you are vegetarian, remove the tuna; if you are in ๐–๐ข๐ฅ๐๐…๐ข๐ญยฎ๏ธ Spring, remove the chickpeas.

At one point in my life, I loved potato chips!

They were my go-to evening snack.

And how many times did I start (and finish) a bag of chips, and not really remember eating them?? Or even tasting them??

Today, I still have chips - the difference is that they are made with kale.

Store the kale chips in a container with the lid slightly open for up to 3 days. Note that leftover kale chips wonโ€™t be as crispy so itโ€™s best to eat them straight out of the oven!

Looking for some variety to add to your list of healthy greens??

Why not Bok Choy??

There are many varieties of bok choy, but generally you will seen just two sizes at the grocery store - regular and baby. I tend to go for the baby bok choy - but both are wonderful.

Bok Choy has a ton of vitamins, minerals and nutrients - it's loaded with Vitamin A, C and K along with a significant amount of calcium and magnesium for strong bones.

And when you add in the anti-inflammatory boost of both garlic and ginger, you get a very healthy dish that takes literally minutes to make!

One thing you'll notice, is that bok choy can often come with dirt and debris under its leaves. The best way to prepare it, is to cut the bok choy in half and then rinse it to get all that dirt out.

This side dish goes great with chicken, salmon or seafood.

Baking can be healthy, as long as you keep an eye on the ingredients.

Most conventional cookies and cakes are full of inflammatory ingredients like refined sugar, wheat, and vegetable oil like canola or safflower (yes, even the โ€œhealthierโ€ options can contain these ingredients).

But not these muffins!!

I will honestly tell you that I turn into a 'closet eater' when I make these, because I really don't want to share them with anyone - they are ๐“๐‡๐€๐“ ๐†๐Ž๐Ž๐ƒ!
