🐟 Looking for a light yet flavorful dinner idea? This Red Snapper Fillet on Fennel and Cucumber Salad brings together crisp veggies, fresh herbs, and tender fish for a meal that feels gourmet without being complicated.

Ingredients:
🔹 2 lbs red snapper (4 fillets)
🔹 4 cups cucumber, finely sliced
🔹 4 cups fennel, finely sliced
🔹 4 tsp lemon juice
🔹 1 tsp sea salt (for cucumbers)
Salad Dressing:
🔹 2 tbsp fresh mint, finely chopped
🔹 2 tbsp parsley, finely chopped
🔹 1 tbsp Walden Farms Orange Spread
🔹 2 ½ tbsp olive oil
🔹 ½ cup cider vinegar
🔹 ⅛ tsp paprika
🔹 Sea salt & pepper to taste
Directions:
1️⃣ Sprinkle salt on cucumbers and refrigerate for 1 hour. Rinse lightly, dry well.
2️⃣ Combine cucumber, fennel, and lemon juice in a bowl. Set aside.
3️⃣ Whisk together salad dressing. Season to taste. Pour half over veggies, refrigerate 1–2 hours.
4️⃣ Season and sauté fish fillets in olive oil on low heat until cooked through. Keep warm.
5️⃣ Plate vegetable salad on chilled plates, top with warm fish, and drizzle remaining dressing.
