🐟 Looking for a light yet flavorful dinner idea? This Red Snapper Fillet on Fennel and Cucumber Salad brings together crisp veggies, fresh herbs, and tender fish for a meal that feels gourmet without being complicated.

Here’s how to make it 👇

Ingredients:
🔹 2 lbs red snapper (4 fillets)
🔹 4 cups cucumber, finely sliced
🔹 4 cups fennel, finely sliced
🔹 4 tsp lemon juice
🔹 1 tsp sea salt (for cucumbers)

Salad Dressing:
🔹 2 tbsp fresh mint, finely chopped
🔹 2 tbsp parsley, finely chopped
🔹 1 tbsp Walden Farms Orange Spread
🔹 2 ½ tbsp olive oil
🔹 ½ cup cider vinegar
🔹 ⅛ tsp paprika
🔹 Sea salt & pepper to taste

Directions:
1️⃣ Sprinkle salt on cucumbers and refrigerate for 1 hour. Rinse lightly, dry well.
2️⃣ Combine cucumber, fennel, and lemon juice in a bowl. Set aside.
3️⃣ Whisk together salad dressing. Season to taste. Pour half over veggies, refrigerate 1–2 hours.
4️⃣ Season and sauté fish fillets in olive oil on low heat until cooked through. Keep warm.
5️⃣ Plate vegetable salad on chilled plates, top with warm fish, and drizzle remaining dressing.

If you're looking for a light and flavorful meal that keeps you on track, Thai Lettuce Wraps are a perfect choice! 🌿🍋

Filled with crisp veggies, fresh herbs, and a savory kick, they’re a tasty way to keep things healthy and satisfying. Plus, they’re super easy to whip up and perfect for a quick lunch or dinner.

Here’s how to make it 👇

Ingredients:
🔹1 packet Ideal Protein Veggie Chili Mix
🔹1 teaspoon safflower oil or other select oil
🔹2 garlic cloves, finely chopped
🔹1 green onion, thinly sliced
🔹1 teaspoon low-sodium soy sauce
🔹3 Boston or butter lettuce leaves
🔹½ cup thinly sliced radishes (about 4 small)
🔹⅓ cup mixed fresh herb leaves (any combination of mint, basil, and/or cilantro), whole or coarsely chopped
🔹1 cup sliced cucumber
🔹Lime wedges, for serving

Directions:
1️⃣ Prepare the chili mix according to packet directions but do not cook.
2️⃣ Heat oil in a small nonstick skillet over medium. Sauté garlic and green onion whites for 1 minute until fragrant.
3️⃣ Add chili mix and cook, breaking it apart, until heated through and lightly browned, 2-3 minutes. Remove from heat and stir in soy sauce. Let cool slightly.
4️⃣ Lay lettuce leaves on a plate, rounded side down. Divide chili mix among the lettuce cups. Top with radish slices, herbs, and green onion greens.
5️⃣ Serve with cucumbers and remaining radish slices. Squeeze lime juice over wraps, fold like a taco, and enjoy.

Craving something cool, crisp, and just a little spicy? This Marinated Spicy Shrimp Salad is fresh, satisfying, and made with whole ingredients that support your goals. It’s perfect for summer days when you want big flavor without the fuss.

💪 High in protein, low in carbs, and totally Phase 1-friendly.

Ingredients:
🔹 1 portion* shrimp, peeled and deveined
🔹 1 stalk green onion, tipped and chopped
🔹 ½–1 jalapeño (depending on how spicy you like it), deseeded and diced
🔹 Juice of one lime
🔹 1 tsp olive oil
🔹 ¼ tsp salt
🔹 1 roma tomato, deseeded and cut into wedges
🔹 ½ English cucumber, sliced into thick half moons
🔹 2 red radishes, sliced thin

Directions:
1️⃣ Bring a pot of water to a boil and blanch the shrimp.
2️⃣ Cook shrimp until opaque, about 2–3 minutes. Drain immediately and toss with green onion, jalapeño, lime juice, olive oil, salt, and tomato.
3️⃣ Set aside and refrigerate until chilled through.
4️⃣ When ready to serve, add cucumber to shrimp mixture and toss.
5️⃣ Garnish with radishes.

Looking for a fresh, protein-packed way to start your day? 🥚🌿 This Leek, Mushroom, and Herb Omelette is bursting with flavor, loaded with nutrients, and ready in minutes. With sautéed veggies, fluffy eggs, and fragrant herbs, it’s the perfect balance of light and satisfying 🍽️

Earlier this week we shared some great information about leeks and here is a delicious recipe to try to incorporate them into your meals!

Here’s how to make it 👇

Ingredients:
🔹½ teaspoon sunflower oil
🔹½ cup chopped leeks
🔹½ cup chopped mushrooms
🔹⅛ teaspoon plus a pinch of salt
🔹3 large eggs
🔹3 large egg whites
🔹⅛ teaspoon ground black pepper
🔹2 tablespoons chopped fresh herbs, such as basil or parsley
🔹Nonstick spray

Directions:
1️⃣ Heat oil in a nonstick skillet over medium heat.
2️⃣ Sauté leeks for 2 minutes, add mushrooms and salt, and cook 3–4 minutes.
3️⃣ Transfer to a bowl and keep warm.
4️⃣ Whisk eggs, egg whites, pepper, herbs, and salt until frothy.
5️⃣ Spray the skillet, heat over medium, and pour in eggs, tilting to coat.
6️⃣ Cook 3 minutes, cover, and cook until set, about 4 minutes.
7️⃣ Add leek mixture to half the omelet, fold, and release edges with a spatula.
8️⃣ Slide onto a plate and serve.
