Ran 21km, then ate at 30 countries 🍷🥨

Better late than never… our Wine & Dine Marathon was followed up by a post race party at Epcot after the park closed! Highly recommend exploring Disney Parks with 1000 of your closest friends 😂 Loved that everyone was limping alongside us!

Despite work being busier than ever and life’s road bumps getting in the way, I knew there was no other option than to cross that finish line. Each race I learn more and more about the art of running and about myself!

I said after this race I would take a break, but the second I crossed that finish line I knew I had more in me 💕 Let the search begin for half marathon 5!

You asked for it, YOU GOT IT! I’m still holding onto summer but embracing the PSL season! This low carb dupe for a Pumpkin Spice Latte allows me to treat myself but without all the extra added sugars.

Just a heads up that the pumpkin sauce is 25 calories and 6g net carbs per pump. Low in both calories and carbs compared to a traditional PSL.

Here’s How to Order a Low Calorie/ Low Sugar Pumpkin Spice Iced coffee:
- Venti Iced Coffee
- 1 pump of Pumpkin Sauce
- 4 pumps of Sugar-Free Vanilla Syrup
- Light Splash of Half and Half Cream

What a way for a week to turn around ☀️

The week started off with a bang… and not in a good way! I got in my first ever car accident and while I’m okay, my car isn’t. Between an already busy schedule then adding on dealing with insurance and all the other fun things that come along with an accident - including looking for a new car… my brain was 🤯

I came home today to find not one but TWO incredible and thoughtful packages from 💕 Penny and her momma are going to be looking flyyyy with our new swag! Not to mention the beautiful flowers to brighten our home!

Super thankful to for being incredibly kind and thoughtful!!

Easy and delicious low carb muffins that are fruity and subtly sweet. They’re perfect for meal prepped breakfasts, lunches or a healthy dessert that adults and kids alike will enjoy.⁣⁣

Recipe:⁣⁣
1.5 cups of almond flour⁣⁣
2 oz blueberries⁣⁣
1 medium banana⁣⁣
4 tbsp butter (melted)⁣⁣
3 eggs⁣⁣
2 tbsp whipping cream⁣⁣
1/4 cup sweetener⁣⁣
1 tbsp baking powder⁣⁣
1 tbsp vanilla extract⁣⁣
⁣⁣
Mix wet ingredients together, then add in dry ingredients. Distribute into muffin liners evenly and bake at 350 for 25 minutes.⁣ Recipe makes 16 muffins. ⁣

BLACK LIME SHRIMP TACOS 🍤⁣

This meal has tang, zest, and some spice all rolled into one 💥⁣ It’s a delicious low carb recipe for summer!

How to recreate it yourself:
- I seasoned some  shrimp with  Black Lime seasoning and sauteed with butter in a heated skillet.
- I tossed on some red onion, avocado, tomatoes, on top of some crisp romaine lettuce.

What would tacos be without some spicy sauce? I drizzled buffalo sauce for a spicy yet creamy sauce to accent the tanginess of the black lime.

Date Night 🤍

Lamb shank with steamed veggies = the perfect option for healthy dining without sacrificing flavour 😍

This dish normally comes with risotto which does not coincide with my lifestyle, but thankfully and many other restaurants provide options just like this to make for an enjoyable and delicious dinner out.

I’m 8 years into keto/ low carb and I still get nervous to ask about substitutions but truthfully, the worst case scenario is they say “no” and I find a different option.

Find what works for you and make it into a moment to remember ✨

From Carbivore to Keto

My health and wellness journey started in January of 2017 when I knew it was time for a change. Being uncomfortable in my own skin and unhappy with the way I looked and felt were trigger for me to find a way to turn my life around. After realizing the typical, low calorie/ low fat diets never worked for me, I decided to research alternatives... that’s when I found the Ketogenic Diet. Concentrating on a low carb, high fat approach I was intrigued by this “backwards” way of thinking. Having continued my research, I realized that this way of life may actually work for me. Fast forward a year and half later, with hard work, dedication, and a newfound outlook on life, I have shed 80 lbs and gained confidence, happiness, and clarity in all facets of life. Follow along my journey as I continue to strive for further results with creative recipes, maintaining an active lifestyle, and living my every day normal life.
