Greek Farro Salad 🥗
1 pkg (225 g) PC Blue Menu Italian Farro Precooked Spelt
1/2 cup (125 mL) thinly sliced red onion
Pinch each salt and granulated sugar
2 tbsp (25 mL) red wine vinegar
1 pkg (340 g) PC Cocktail Tomatoes, each cut in eight wedges
Half sweet red pepper, chopped
1/3 cup (75 mL) each chopped fresh coriander and mint
1/3 cup (75 mL) chopped green onion
1/3 cup (75 mL) crumbled drained PC Light Feta Cheese in Brine
3 tbsp (45 mL) pitted and chopped black olives
2 tbsp (25 mL) pumpkin seeds
1. Bring 1 cup (250 mL) water to a boil in small saucepan. Stir in farro; reduce heat to low and simmer, covered, for 10 minutes. Remove from heat; drain. Let stand, covered, for 5 minutes. Fluff with fork; transfer to large bowl.
2. Meanwhile, combine red onion, salt, sugar and vinegar in small bowl. Let stand for 15 minutes.
3. Stir red onion mixture into farro. Stir in tomatoes, red pepper, coriander, mint, green onion, cheese, olives and pumpkin seeds.
