Leftover Turkey Soup
2 tbsp extra-virgin olive oik
1 medium white onion, finely diced
4 garlic cloves, minced
1 tsp dried thyme
3 medium carrots, peeled and finely dices
3 celery sticks, finely diced
1/4 cup all purpose flour
1 (32oz) box low-sodium chicken or turkey stock (or homemade!)
2 pounds (around 4 cups) cooked turkey meat, shredded or in large chunks
kosher salt
freshly ground black pepper
chopped flat-leaf parsley lemon wedges and red pepper flakes (for garnish)
In a heavy-bottomed pot, heat oil over medium heat.
Add onions and garlic, cook for around 3 minutes until translucent and soft.
Add the thyme, cook for around 2 minutes until fragrant.
Add carrots and celery, for around 2 minutes, until translucent.
Add flour and cook for 3 minutes, making sure too stir constantly until all vegtables are coated.
Slowly pour in chicken/turkey stock, stirring continuously to remove any lumps of flour.
Add in turkey meat.
Season with salt and pepper to taste.
Bring to a boil, then reduce heat. Simmer for 20 minutes until soup has slightly thickened and liquid has reduced.
Have a taste- adjust seasoning if needed
Ladle into bowls, garnish and serve!
