As the leaves now fall for the season and the plants and fungi prepare for their long rest, classes are wrapped for the 2025 year. I want to take a moment and thank every student who came to programs this year from half day intro classes to my in depth Wild Medicine and Fungi As Kin groups. I hope the classes inspired in your a deeper connection with the natural world and the drive to take the teaching into your everyday lives. I'll be back teaching next year with perhaps a few winter programs. Stay tuned in early 2026 for our course calendar. Some fun snapshots from my Introduction to Mushroom Foraging and Fungi As Kin Mushroom Intensive program the last month. Even though it has been dry, there are still mushrooms in the woods to be found.One highlight for me was making jelly candy from Wood Ear mushrooms and Beech Disc jelly mushrooms. With the Late Fall, Oysters and Blewit mushrooms now showing themselves it is officially the end of the mushroom season. Get out there while you can and explore the fun Fungi while you can and if you want to learn more about wild mushrooms come take a class with me next year!

The heat the last few weeks has had me making gallons and gallons of cold Sumac iced tea. As the purveyor of many delicious cocktail and mocktail mixers I love a fancy drink but when the heat knocks all energy something I can batch up and simply pour over ice all I can handle. I take a gallon jar and fill third full with Sumac berries and top with cold water. Let steep for a few hours or overnight then chill in the fridge. I then strain and sweeten to taste with maple syrup or a cane sugar simple syrup. Pour over ice and you have the most refreshing and cooling pink lemonade tasting summer drink. Come to a class to learn all about how to harvest Sumac!

This week begins our annual Milkeeed Pod harvest. I love this tradition of visiting the same beautiful meadow on a friend's property year after year. Seeing how the Milkweed has spread over the last decade, carefully watching out for Monarch caterpillars (and leaving those plants undisturbed), enjoying the diversity of plants and insects these meadows support. Our picking causes little impact on the plants and like the deer our foot paths through the meadows are minor. With them we make truly sustainable pickle that I am super proud of. It's been a HOT few days for this months Wild Medicine program. We spent the morning harvesting a wild salads made of weeds and flowers. Students pressed their custom infused herbal vinegars made in June and used as the vinegarette on their salad. We then made St John's wort and Mullein flower oil. I introduced a number of medicines on the land and each student being called to started a tincture extract. A full and wonderful day of learning on the land.

Beat the heat with our cooling Shrub Syrups! Did you know that things that taste sour can cool you down? Our most popular flavor is our Strawberry & Sumac Shrub Syrup made with local Ontario Strawberries, organic cane sugar and foraged Sumac berries infused into organic Ontario apple cider vinegar. It's tart and sweet and the most cooling and refreshing drinking served over ice and topped with sparkling water.
