The heat the last few weeks has had me making gallons and gallons of cold Sumac iced tea. As the purveyor of many delicious cocktail and mocktail mixers I love a fancy drink but when the heat knocks all energy something I can batch up and simply pour over ice all I can handle. I take a gallon jar and fill third full with Sumac berries and top with cold water. Let steep for a few hours or overnight then chill in the fridge. I then strain and sweeten to taste with maple syrup or a cane sugar simple syrup. Pour over ice and you have the most refreshing and cooling pink lemonade tasting summer drink.
