Marinated Cheese and Olives, a delicious combination of tangy, herbed flavors that made him say, "This tastes like a gourmet treat!" Now, it’s our go-to for family gatherings and as a quick, flavorful appetizer. Isn’t it amazing how a simple jar can pack so much flavor?

Ingredients:

1 cup cubed cheese (cheddar, mozzarella, gouda, or a mix)
1 cup assorted olives (green, black, and kalamata)
1/4 cup roasted red bell peppers, chopped
1/4 cup extra virgin olive oil
1 tbsp red wine vinegar (or white wine vinegar for a lighter taste)
1 clove garlic, minced
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp red pepper flakes (optional, for a hint of spice)
1 tbsp fresh parsley, chopped
Salt and black pepper, to taste
Instructions:

Prepare the Ingredients: In a medium mixing bowl, combine the cubed cheese, olives, and chopped roasted red bell peppers.

Make the Marinade: In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, dried basil, red pepper flakes (if using), and chopped parsley. Season with salt and black pepper to taste.

Combine and Marinate: Pour the marinade over the cheese and olive mixture. Toss gently to ensure everything is well-coated in the marinade.
