1 cup cubed cheese (cheddar, mozzarella, gouda, or a mix)
1 cup assorted olives (green, black, and kalamata)
1/4 cup roasted red bell peppers, chopped
1/4 cup extra virgin olive oil
1 tbsp red wine vinegar (or white wine vinegar for a lighter taste)
1 clove garlic, minced
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp red pepper flakes (optional, for a hint of spice)
1 tbsp fresh parsley, chopped
Salt and black pepper, to taste
Instructions:
Prepare the Ingredients: In a medium mixing bowl, combine the cubed cheese, olives, and chopped roasted red bell peppers.
Make the Marinade: In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, dried basil, red pepper flakes (if using), and chopped parsley. Season with salt and black pepper to taste.
Combine and Marinate: Pour the marinade over the cheese and olive mixture. Toss gently to ensure everything is well-coated in the marinade.
Transfer to a Jar: Carefully transfer the mixture to a clean mason jar or any airtight container. Pour any remaining marinade from the bowl over the top. Seal the jar tightly.
Marinate and Chill: Place the jar in the refrigerator and let it marinate for at least 4 hours, preferably overnight, to allow the flavors to meld.
Serve: Serve the marinated cheese and olives chilled or at room temperature as an appetizer, with crusty bread or crackers on the side.
Pro Tips:
Cheese Variations: Try adding cubes of feta or Monterey Jack for additional flavor and variety.
Herb Adjustments: Fresh rosemary or thyme can add even more aromatic depth.
Storage: Store the marinated cheese and olives in the refrigerator for up to one week. The flavor will continue to develop, making it even tastier with time.
