When ingested, the body converts the more stable NAC into the less stable glutathione, which consists of three amino acids: glycine, cysteine, and glutamic acid. Glutathione is naturally present in humans, animals, plants, and fungi, where it helps protect cells from oxidative damage. In addition, glutathione helps the body “recycle” vitamin E and C.

Studies show that higher blood levels of glutathione are associated with a reduced risk for illness, especially in the elderly.

Eating the following sulfur-rich foods can help one optimize blood glutathione levels. When this is not enough, supplementing can be considered.

Sulfur-rich vegetables and fruits:
* avocado
* broccoli
* cabbage
* cauliflower
* garlic
* grapefruit
* kale
* onions
* tomatoes

Cysteine-rich foods such as chicken, turkey, yogurt, cheese, eggs, sunflower seeds, and legumes can also help raise blood levels of glutathione. NAC is the nutritional supplement normally consumed to help increase glutathione levels.

NAC is a potent antioxidant used to treat paracetamol toxicity by replenishing stores of glutathione. It may also benefit immune, respiratory, liver health, and more.

Experimenting with making, baking and creating. Today I lovingly made using sprouted spelt flour and vanilla protein powder. Mmmmmm and they turned out swell.
Did you know? Using sprouted ingredients such as: grains, seeds, beans and legumes increases the wealth of nutrients and their active enzymes help with nutrient assimilation and the digestive process.

Another day, another breakfast. I’m on lox down my friends!! Tasty sliced lox on multigrain sourdough rye, if this bread was sprouted too, then I would be in heaven. In the middle, capers, raw red onion and avocado and the tiniest amount of cream cheese (which is a treat!). Topped with everything bagel spice.

When creating a meal I want all my ingredients to fulfill a nutritional benefit to my health and well being. Did you know, onions, similar to garlic in its effect, although more subtle, could be considered the “poor man’s antibiotic”. Onions contain immunosuportive oligosaccharides that feed the healthy bacteria of the large intestine and help keep it free from disease. .

Breakfast shouldn’t be complicated. Today it consisted of a farm raised duck egg, sourdough rye toast, half an avocado and, for good microbiome measure, kraut-chi. Which I might add is a delicious fermented, probiotic packed, concoction of both sauerkraut and kimchi ingredients.

The gut is ‘outside’ our body for a very important immunological reason. You see, our environment is naturally filled with billions of bacteria. This is not to scare you, as bacteria play a very important role in sustaining life on earth. However, our body is not equipped to let any ol’ bug from the outside world into our bloodstream.

Therefore, our gut contains a very sophisticated immune system to make sure that the bugs that we swallow and eat are not given free reign into our bloodstream. This is why bacteria and food are kept ‘outside’ our body and safely enclosed within your gut until deemed safe enough to pass through our gut’s immune defences and into our blood.

I believe the following to be true on all accounts listed:
"Many have postulated that the microbiome has an important part to play in inflammatory bowel diseases. Others have attempted to link it to disorders of development and behavior, like autism. Because the microbiome takes root in childhood, studies have explored if pregnancy, method of delivery or even the environment might hold some meaning in the microbiome’s development and later health.
Even more significantly, many have begun to hypothesize that it has a significant role in the current obesity epidemic. Other studies show that changes in diet can change the microbiome in human beings."
