Diwali, also known as Deepavali, is a significant Hindu festival symbolizing the victory of light over darkness, good over evil. People celebrate by lighting oil lamps (diyas), exchanging gifts, enjoying festive meals, and spending time with family and friends. 🌿 Vegan Recipe Alert 🌿 As the weather cools down, it's time to embrace hearty soups and stews. This vegan/vegetarian stock is the perfect base for your recipes. Why buy vegetable stock when it's incredibly easy to make at home, and you have full control over the ingredients? Plus, it's budget-friendly.

You'll need:

* 3-4 medium carrots
* 1/2 bunch of celery ribs
* 2 medium onions
* 1 bulb of garlic
* 3-4 bay leaves
* 1 tsp whole black peppercorns
* 4-5 dried shiitake mushrooms
* 1 small to medium piece of kombu (optional)
* 2 pinches of dulse flakes (optional)
* 1 tsp salt
* 4 liters of water
* 1 TBS oil

Here's how to do it:

* Roughly chop all the veggies. Don't cut them too small.
* In a hot, large pot, add oil and the chopped veggies. Let them caramelize (brown), then stir. Be careful not to burn them; the caramelization adds depth of flavor.
* Add water and scrape any bits stuck to the bottom of the pan.
* Add the remaining ingredients. Bring it to a boil, then reduce the heat to a simmer.
* Let it simmer for 1 1/2 to 2 hours.
* Strain out the veggies and cool the stock or use it right away.
* This stock keeps well in the fridge for a few days and freezes beautifully.

This versatile vegetable stock is the perfect hug that you'll need for all of your cooking needs. Happy cooking! Enjoy! 🍲🥄❤️

Find your comfortable seat—whether it's the lotus or half-lotus if you're able, or simply rest in a chair with a straight back. Your comfort is key.

Hold your chosen mala in your right hand, extending your pointer finger gracefully. Allow the mala beads to glide over your middle finger, guided by the gentle touch of your thumb moving it downwards.
