🍽️ Lemon Herb Salmon with Roasted Veggies

Nourish your eyes while you nourish your body!

Ingredients (2 servings):
- 2 salmon fillets (4–6 oz each)
- 1 tbsp olive oil
- 1 garlic clove, minced
- Juice of 1 lemon
- 1 tsp dried oregano or dill
- Salt & pepper to taste
- 1 cup broccoli florets
- 1 cup chopped carrots
- 1 red bell pepper, sliced
🔥 Directions:
1. Preheat oven to 400°F (200°C).
2. Toss veggies in 1/2 tbsp olive oil, salt, and pepper. Spread on a baking sheet.
3. Mix remaining olive oil, lemon juice, garlic, and herbs. Brush over salmon fillets.
4. Place salmon on the baking sheet with veggies.
5. Bake for 15–20 minutes, or until salmon is cooked through and veggies are tender.
6. Serve with a wedge of lemon and enjoy!
