How many of you out there are out of ideas when it comes to eating eggs?
Well, look no further because I have a unique way of poaching eggs that you can do for one person or 20!
Poaching eggs by lining a glass with plastic wrap, adding whatever unique add-ins you’d like (mine has snipped chives, salt and pepper), wrap up the end, secure it to a skewer with a twist tie and then hang it over a pot of boiling water (you can do this in multiples!!).
This method takes a wee bit longer than the usual one...depending on your desired ‘doneness’, it can take up to 6 minutes.
Open up the plastic pouch and serve with crispy toast and smashed avocado!
And to get the best egg flavour out there, always buy Conestoga Farms Eggs free run eggs... my go-to and seriously the best flavour!

Is it just me or have y’all been eating with reckless abandon?
It might be summer... or covid... or menopause... or all three.
But I’m trying to rein it in and I always find inspiration over at my friend Aleyda’s page ...
She’s a rockstar! She dishes out fabulous dishes, all while holding down a full time job, working on her blog, managing two small ones at home and working on multiple projects as well!
These smashed avocado and chickpea sweet potato toasts are an inspiration from her and are just what the doctor ordered!!
Aleyda, in exchange for your inspiration, I will give you some parenting advice...
Being a parent is like jumping out of a plane with a bunch of people who don’t know how to open their parachutes so you fly around doing it for them ... and then you hit the ground but you don’t die because you have to get up and cook dinner😏

Heyyya...
Did y’all have a good Sunday?
It was so beautiful outside and I crossed off a pile of things on my to-do list.
I had “make my baked, blackberry chocolate glazed donuts” on my to do list but nada...
It’s great getting things done but it’s also stressful not getting it ALL done.
But, come to think of it, that’s not really stress.
Stress was growing up in the 70’s.
If you missed a TV show in the 70’s, you just missed it.
Like forever.
Now, that’s stress!

I’m so behind but I’m finally getting around to sharing these pizzelle (Italian waffle cookies) which I put up on the blog last week...
Italians know all about them and they are now even sold in grocery stores... but if you’re lucky enough to have this waffle iron, you really need to try your hand at these.
I’ve been eating them for breakfast all week instead of my usual peanut butter and banana smoothie.
Speaking of bananas, I just read a study that found humans eat more bananas than monkeys.
Which is good to know because I don’t remember the last time I ate a monkey🤔.
