Deep-Fried Dandelions 🌼

Ingredients:

1 to 1½ cups fresh dandelion flower heads (pesticide-free, fully open, rinsed and dried)

¾ cup all-purpose flour

1 teaspoon baking powder

¼ teaspoon salt

1 large egg

½ cup milk or plant-based milk

1 tablespoon honey or maple syrup (optional, for a sweet touch)

Oil for deep-frying (sunflower, canola, or avocado oil)

Optional Variations:

For savory: Add ¼ tsp garlic powder, paprika, or chopped herbs to the batter

For sweet: Add ½ tsp cinnamon or a pinch of nutmeg

Directions:

Prep the flowers: Rinse the dandelion heads gently and pat dry. Remove as much green from the base as possible to reduce bitterness, but keep the blossoms intact.

Make the batter: In a bowl, whisk together flour, baking powder, and salt. In a separate bowl, beat the egg, milk, and sweetener (if using). Combine wet and dry ingredients and whisk until smooth. Let the batter rest for 5–10 minutes.

Heat the oil: In a deep skillet or saucepan, heat about 1–2 inches of oil to 350°F (175°C). Use a thermometer for accuracy, or test with a drop of batter—it should sizzle immediately.

Dip and fry: Holding each flower by the base, dip it into the batter to coat fully, then gently place it flower-side down into the hot oil. Fry in small batches for 1–2 minutes per side, or until golden and crisp.

Drain and serve: Use a slotted spoon to transfer the fried blossoms to a paper towel-lined plate. Sprinkle lightly with salt for savory fritters or a dusting of powdered sugar for sweet ones.
