• Don’t jiggle a teabag by the string
• Don’t drain a teabag by winding the string around a spoon
• Don’t remove a lemon from the cup once it’s been added
• Don’t make noise with a spoon while stirring
• Don’t allow flatware to touch the table once it’s been used

- Lower Water Temperature: Boiling water scorches leaves, releasing excess tannins. Use water below boiling (212F or 110C).
- Reduce Steeping Time: Over-steeping is a primary cause of bitterness. Aim for 1–3 minutes for green tea and around 1–5 minutes for black tea.
- Don't Squeeze the Tea Bag: Squeezing the bag at the end releases concentrated tannins, which are the main source of bitterness.
- Use Better Water: Filtered water often produces a better, less bitter taste than tap water.
- Upgrade to Loose Leaf: Lower-quality tea bags often contain smaller particles (fannings/dust) that release tannins faster than whole-leaf tea.

FIrst of all, don't cause a stir.
If you want to stir tea like a pro, start at 12 o’clock and softly fold the tea back and forth. Do not clink the spoon against the china and never leave the spoon in the cup. Once you’ve stirred to perfection, simply leave the teaspoon on the saucer to the right-hand side of the cup.
