Volver a la comida real no es una moda. Es un ajuste de rumbo necesario.

En las conversaciones más recientes sobre salud pública por fin se está diciendo en voz alta lo que durante años fue ignorado o diluido.

👉 Las nuevas guías nutricionales dejan de hablar de “dietas perfectas” y proponen algo mucho más sensato:
un marco de alimentación basado en comida real, adaptable a las personas, las familias, sus contextos culturales y también a su realidad económica.

Algunos puntos clave de este enfoque:

🔹 Priorizar proteína de calidad en cada comida
Tanto de origen animal como vegetal. La proteína deja de ser demonizada y vuelve a ocupar su lugar en la salud metabólica, la saciedad y el mantenimiento de la masa muscular.

🔹 Reducir de forma clara los ultraprocesados
Alimentos empacados, listos para consumir, con exceso de azúcares, sodio, grasas de baja calidad y aditivos químicos. Menos productos, más alimentos.

🔹 Cero ambigüedad con el azúcar añadida, especialmente en la infancia.
No como “consumo ocasional”, sinoino como algo que no forma parte de una alimentación saludable.

🔹 Rehabilitar las grasas saludables
Grasas que vienen de alimentos reales: huevos, pescados, carnes, frutos secos, semillas, lácteos enteros, aceite de oliva, aguacate.

🔹 Priorizar granos integrales y reducir carbohidratos refinados, sin caer en extremos ni dogmas.

🔹 Aceptar que, para ciertas condiciones crónicas, dietas más bajas en carbohidratos pueden ser una herramienta terapéutica válida.

💡 Nada de esto es radical. Es profundamente lógico.
Y es exactamente el enfoque que desarrollo en el capítulo dedicado a nutrición de mi libro, donde hablo de:

salir de la obsesión,

dejar la culpa,

entender la comida como información para el cuerpo,

y construir hábitos sostenibles que acompañen la vida real, no la perfección.
