Summer is here! I’m trying to limit screen time, and coming up with activities everyone can get on board with can be hard. This one asked to help prep and cook with me cause he was bored. 🥳 Why didn’t I think of this genius hack sooner? 💡My oldest helps keep track of our grocery bill when shopping to stay within budget. Taco Tuesday can be delicious and healthy: it’s protein packed, lots of in season fresh produce to choose from (I picked what needed to be used up in the fridge), added more flavour and less salt, and it entirely customizable. My kids all agreed this was delicious as they picked their own toppings. The tortilla I bought from Costco also had 20g of fiber (!). Easy dinner win 🌮

Felt like I made a Chinese mom somewhere proud! Made this silkie chicken soup today in the instant pot. Threw in some pork bones, candied preserved dates, dried lilly, dried Chinese yam, gogi berries, and longan. Added salt after cooking. IP soup mode for 40min. Kids all welcomed it. My 4 yo said verbatim “it tastes Chinese, I’m going to say a lot of Chinese now!” I sure hope so. 😆

Kids love carbs, no doubt about that. Feel free to use that carb as a ‘vehicle’ to include more nutrition into it. To this waffle batter, I included milk instead of water, doubled the eggs, and added in individual heaping scoops of ground flax seed and almond flour. Work smarter, not harder. No need to make each meal a struggle!

Mealtimes with your youngin’ got you down? I got you. There are many reasons why children struggle at mealtimes, I’ve been there, and I have helped hundreds of families navigate this tricky phase. This photo is of my child completely shutting me down during a meal, when I tried to ‘assist’ her with feeding. We need to respect our children’s need for individuation, and make sure our ‘helping’ isn’t harming their process of learning. Had an amazing cruise on Symphony of the Seas recently. Got to tour the massive kitchen that serves 6500 guests. The numbers were mind boggling. 500,000 pieces of flatware onboard. 30,000 meals per day. Who’s eating 4.6 meals per day?? 150,000 pieces of bread and pastries freshly baked per day. Dozens of gallons of ice cream eaten each day. Definitely a land of indulgence. Military precision for storage and balancing inventory weights evenly. What was impressive is the massive operation of running the kitchen staff. Hats off to the kitchen team and wait staff for taking care of us so well and making it look easy. Thanks for bringing me!

Take care of your heart health with beans. Not only is it a musical fruit lol, it is full of magnesium, folate, antioxidants and fiber which is needed to help lower blood pressure and to protect your heart. I’m not sure how true it is, but in the blue zones documentary on the host shared that if we eat 1 cup of beans everyday, it can add 6 years of life! 🤯❤️
This is great news for us all who think healthy food is too expensive. Beans and legumes are still the cheapest (considered peasant food historically) but most nutritionally dense. It is doable for us all. Bean on!🫘

Perimenopause is the transition period of 2-10 years prior to menopause. Ovaries are slowing down, estrogen is lowering, which naturally causes weight gain (even if you didn't change your eating habits). It can creep up on you, but common symptoms include trouble sleeping, headaches, moodiness, low energy and PMS like symptoms. Fear not, you don't have to be plagued by these symptoms. To commemorate our first real snowfall of the season, I'm making Taiwanese Beef Noodle Soup recipe. This recipe is phenomenal, and dare I say it's even richer and deeper than some restaurants' beef noodle soup. 🥩🍜 My kids don't usually go for the 'soup meat'. But they kept asking for this one! 🥳 A must try in the instant pot!
