This arugula walnut pesto brings a bit of bite, balanced with creamy ricotta and light angel hair nuPasta. ⤵️

Ingredients:
· 2 packs nuPasta Angel Hair
· 1 cup arugula
· ½ cup toasted walnuts
· 2 tbsp lemon juice
· 1 tsp lemon zest
· 1 clove garlic
· ¾ tsp salt
· ½ tsp pepper
· 2 tbsp olive oil
· ½ cup ricotta cheese
Directions:
→ Drain, rinse, and pan-fry nuPasta Angel Hair for 2–3 minutes. Set aside.
→ In a food processor, blend arugula, walnuts, lemon juice, zest, garlic, salt, and pepper. Drizzle in olive oil until smooth.
→ Toss pasta with pesto, top with ricotta, and serve.
