Bulk meal prep = your weekly life hack ✨ Cook once, eat smart for a few days or all week.

By making big batches of your fave meals, you save time, save money, and avoid the what do I eat & running for quick fixes .

- wash & cut fruits veggies
- cook 2 proteins, carbs, lots veggies
- I like to prep for 3 days max
- breakfasts are normally eggs so I prep those at the time

Protein Bagels 🥯

2 cups GF flour
1 1/2 cups plain Greek yogurt
1 tsp baking soda
1 tsp salt
1 egg for wash

Preheat oven to 375, line sheet pan with parchment paper.

Combine all ingredients together except for egg.
Mix and knead for a few minutes until well blended.
Cover & let sit for 10min.

Divide into 5-6 equal portions roll into ball, shape with hole in center.

Place on sheet pan, brush with your egg wash and sprinkle with any seasoning of choice. I used everything bagel.

Bake 375 for 25min. Let cool completely before slicing.

Work great in toaster!!

Protein Banana Bread 🍌🍞

- 1½ cups banana puree (about 3 ripe)
- ½ cup Greek yogurt
- ⅓ cup melted butter
- ½ cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup gluten-free all-purpose flour (or regular all-purpose flour)
- 1 cup blanched almond flour
- ½ cup vanilla protein powder
- 3 teaspoons baking powder
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- ¾ cup chocolate chips or walnuts

Preheat the oven to 350°F Spray and line a 9x5-inch loaf pan.

In a large mixing bowl, puree the bananas until smooth.
Whisk in the Greek yogurt, melted butter, sugar, eggs & vanilla extract until well combined.

Add the gluten-free all-purpose flour, almond flour, protein powder, baking powder, cinnamon, and salt. Whisk until a smooth batter forms Ingredients, fold in chocolate chips or nuts

Pour the batter into the loaf, bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Let cool for about 10min before removing from loaf pan

Pumpkin Spice Protein Muffins 🎃

Dry Ingredients
2 cups Kodiak pancake mix
1.5 tsp cinnamon
1.5 tsp pumpkin spice
1 tsp baking powder
1/4 tsp salt

Wet Ingredients
1 banana mashed (ripe)
1 cup pumpkin purée
1/3 cup Greek yogurt plain
2 eggs room temp
1/2 cup honey
1/4 cup avocado oil
2 tsp vanilla

Preheat oven to 360 & line 12 muffin tins.

Combine all wet ingredients, blend until smooth.

Combine dry ingredients in separate bowl and then add into your wet mixture stir until well combined.

Pour into muffin tins, sprinkle little brown sugar on top. Bake 18-20min or until your toothpick or fork come out clean.

I’ve made a few recipes with this mix & have never disappointed.

Kiwi contains high amounts of vitamin C, Rich in antioxidants, great fibre source 5g per serving. (Some people even eat the skin for extra fibre). Great for digestion & constipation!!

Banana Peanut Butter Brownies 🍫🥜🍌

Ingredients
- 1 1/2 cup mashed ripe bananas (approx 3)
- 1/2 cup smooth almond butter or peanut butter
-2 eggs room temperature
-1/2 cup cacao powder
- 3 tbsp brown sugar or coconut sugar
- 1/4 tsp baking soda
- 1/4 tsp vanilla extract
- 1 cup semi sweet chocolate chips divided
- pinch sea salt ( optional)

Let’s make….

Preheat oven to 350
In a large mixing bowl mash bananas with fork
Add almond butter, eggs & vanilla
Mix the wet ingredients with a hand blender until smooth
Add in cocoa powder, sugar, baking soda & pinch of salt blend until combined
Gently fold in 2/3 cup chocolate chips
Add the batter to a parchment lined 8x8 baking pan, add rest of chocolate chips
Optional to swirl a few spoonfuls of the almond/peanut butter
Bake for 12 minutes, remove from oven and gently tap pan on your stove top sprinkle with sea salt (optional)
Bake for another 10min until cooked
Remove from oven let cool before cutting into squares

Mediterranean Cod Bake

4 Cod Fillets
1/2 cup grape tomatoes
1/2 purple onion
Artichokes (drained)
Kalamato olives (drained)
1 tsp Salt
1 tsp Pepper
I tsp oregano
Drizzle White Wine
Drizzle Olive Oil
Feta Cheese (optional)

1.Pat dry fillets, season with salt pepper & oregano
2. In oven safe dish arrange a few slices of lemon & place fish over lemon slices.
3. Add chopped tomatoes, onions, artichokes & olives on top of fish.
4. Drizzle with olive oil, white wine & lemon juice.
5. Bake at 360 for approximately 30min until cooked
Optional to add feta cheese when ready.

Pair with some Jasmine rice & green beans.

Gingerbread Holiday Muffins

Ingredients
2 cups old fashioned rolled oats
1/2 cup apple sauce, unsweetened
1/2 cup maple syrup
1/4 cup molasses
2 eggs room temp
2 teaspoons vanilla extract
2 teaspoons baking powder
2 teaspoons cinnamon
1 1/2 teaspoons ground ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt

Vanilla Frosting
6 tbsp powdered sugar
1/4 tsp vanilla
1 tbsp almond milk

Directions
Preheat oven to 350° Fahrenheit and line a muffin tin with muffin liners.
Add oats to a blender and blend until it’s ground into a flour.
Add in remaining ingredients, then blend until a smooth batter forms.
Transfer ½ cup batter into each muffin mold, then bake for 20-25 minutes or until a toothpick inserted down the center of one muffin comes out clean. Remove from oven and let muffins cool completely.

Mix ingredients for vanilla drizzle in bowl until smooth & drizzle over each muffin.

Cashew Cookie Clusters

- 2 cups cashews unsalted
- 2 cups coconut flakes unsweetened
- 1 cup dark chocolate chunks, I used enjoy life brand
- 1/2 can coconut condensed milk

1. Stir ingredients into a bowl
You can break up the cashews if you want less chunky. Mixture will be sticky.

2. Preheat oven to 360, line a baking sheet with parchment paper. Using a ice cream scooper, scoop a heaping amount into a cluster. Bake for approx 12 min or until golden

Note: When ready it may look like the condensed milk is spreading, with a spoon push the liquid back into a cluster. Let cool completely don’t remove from pan while hot or they will fall apart.

They are addictive so goey & chewy.

Lemon Coconut Protein Bites 🍋🥥

Ingredients
- ⅓ cup coconut oil
- ⅓ cup maple syrup
- 1 tsp vanilla extract
- 1 lemon juice (approx 2 tbsp) and zest
- 2½ cups almond flour
- ¼ cup shredded coconut unsweetened divided
- 2 tbsp vanilla protein powder

Scoop coconut oil into a medium microwave-safe bowl. Heat until melted, Let cool slightly. You can use liquid coconut oil too 

Add maple syrup, vanilla, lemon juice and zest. Stir to combine.

Add in almond flour, ¼ cup of shredded coconut, and protein powder. Stir until completely combined. 

Refrigerate approx 30min (this makes it easier to roll). Scoop out approximately 2 tbsp of dough and roll the batter into balls.
Roll balls in shredded coconut to coat.

Refrigerate to harden. Serve chilled. 

Store in an airtight container in the refrigerator for up to 1 week.

Makes approx 18
