🥗 Pearl Couscous & Chickpea Salad with Feta, Dates, and Pomegranate
Ingredients
- 1 cup pearl couscous (cooked and cooled)
- 1 cup cooked chickpeas (drained and rinsed)
- ½ cup crumbled feta cheese
- ½ cup pomegranate seeds
- ¼ cup chopped fresh mint
- ¼ cup sliced dates (Medjool or Deglet Noor work well)
- 2–3 tablespoons olive oil
- Juice of ½ lemon (optional for brightness)
- Salt and pepper to taste
Optional Add-ins
- Toasted pistachios or almonds for crunch
- A pinch of sumac or za’atar for extra Middle Eastern flair
Instructions
- Cook the couscous: Prepare according to package instructions. Fluff and let cool.
- Combine ingredients: In a large bowl, mix couscous, chickpeas, feta, pomegranate seeds, mint, and dates.
- Dress it up: Drizzle olive oil and lemon juice over the salad. Season with salt and pepper.
- Toss gently: Mix until everything is evenly coated and distributed.
- Serve chilled or at room temperature: Great as a standalone dish or alongside grilled veggies or falafel.

CRANBERRY CHIA JAM 🍊🍒✨

✨2 cups fresh or frozen cranberries
✨¼–⅓ cup pure maple syrup or honey (adjust to taste)
✨½ cup fresh orange juice
✨1–2 teaspoons orange zest
✨1 teaspoon vanilla extract (optional)
✨2–3 tablespoons chia seeds

1. Add cranberries, orange juice and sweetener to a saucepan. Bring to a gentle boil, then reduce to a simmer. Cook for 10–12 minutes, stirring occasionally, until the cranberries burst and the mixture thickens.

2. Use a fork or potato masher to mash the cranberries to your desired texture (smooth or chunky).

3. Stir in orange zest and vanilla if using.

4. Remove from heat and stir in chia seeds. Let the jam sit for 10–15 minutes to thicken, stirring once or twice.

5. Transfer to a jar and let cool completely. It will continue to thicken as it chills.

✨Store in an airtight container in the fridge for up to 2 weeks. Can be frozen for up to 3 months.

✨For a smoother jam, blend briefly with an immersion blender before adding chia seeds.

✨Add a pinch of cinnamon or ginger for a warm holiday flavor.

✨For kid-friendly sweetness, mix in a mashed ripe pear or apple instead of extra sweetener
