It's almost pumpkin season!

Pumpkins with Nutmeg Macaroni

Ingredients:
- 8 oz macaroni pasta
- 1 small pumpkin, peeled and diced
- 1 cup unsweetened plant-based milk
- 1/4 cup nutritional yeast
- 1/2 tsp nutmeg
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

Directions:
1. Cook the macaroni pasta according to package instructions. Drain and set aside.
2. In a large pan, steam the diced pumpkin until tender.
3. In a blender, combine the steamed pumpkin, plant-based milk, nutritional yeast, nutmeg, garlic powder, salt, and pepper. Blend until smooth.
4. Pour the pumpkin sauce over the cooked macaroni and stir to coat evenly.
5. Cook the macaroni and pumpkin sauce mixture over low heat for a few minutes until heated through.
6. Serve hot, garnished with fresh parsley. Enjoy your Pumpkins!

Bright and Fresh Lemon Basil Hummus
Elevate your snacking game with this zesty twist on traditional hummus! The combination of fresh lemon and aromatic basil creates a vibrant flavor profile that’s perfect for spreading on pita, dipping vegetables, or simply enjoying by the spoonful. Quick to make and refreshing, this hummus is sure to become a favorite in your repertoire.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tablespoons tahini
- Juice of 1 lemon
- 1 garlic clove, minced
- 1/4 cup fresh basil leaves, packed
- 1/4 cup water
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions
1. In the bowl of your food processor, combine the chickpeas, tahini, lemon juice, minced garlic, and fresh basil.
2. Pulse until everything is well blended and smooth.
3. With the food processor running, gently pour in the water and olive oil to adjust the texture to your liking.
4. Sample a bit of the hummus and season it with salt and pepper according to your taste preference.
5. Spoon the hummus into a beautiful serving bowl, and if desired, finish with an extra drizzle of olive oil on top.
6. Serve this delicious spread alongside a colorful array of fresh veggies, warm pita bread, or crunchy crackers for a delightful snack experience!
