Kale Salad with Chia Lemon Dressing
Lacinato kale is also called black or Tuscan kale. The leaves are longer, thinner and darker than regular curly kale. Use a coffee grinder to grind the chia seed; ground chia seed thickens the vinaigrette, making it almost creamy.
- Ingredients
2 tbsp (25 mL) PC Organics Black Chia Seed, ground
1/2 tsp (2 mL) salt
1/2 cup (125 mL) PC New World EVOO Extra Virgin Olive
Oil
1/3 cup (75 mL) fresh lemon juice
2 bunches lacinato kale (about 600 g), washed and spun
dry
1 can (540 mL) PC Blue Menu Chickpeas, drained and
rinsed
1 cup (250 mL) halved grape tomatoes
1/4 cup (50 mL) finely chopped fresh chives
2 tbsp (25 mL) PC Organics Black Chia Seed
- Instructions
1. Whisk together ground chia seed, salt,
olive oil and lemon juice in small bowl.
Let stand for 5 minutes.
2. Remove and discard stems from kale
leaves. Tear leaves into bite-size
pieces. Place in large bowl. Pour
dressing over kale; massage into
leaves for 1 minute to soften them.
3. Add chickpeas, tomatoes and chives to
bowl; toss to combine. Serve garnished
with whole chia seed

Simple pantry staples ­– like cumin, chili powder and coriander – give these fajitas bold flavour without the need for added salt. Serve with low-fat sour cream or plain Greek yogurt and extra salsa on the side.
- Ingredients
450 g PC Blue Menu Air Chilled Boneless, Skinless Chicken
Breasts, cut into 4- x 1-inch (10 x 2.5 cm) strips
3 cloves garlic, minced
4 tsp (20 mL) ground cumin
2 tsp (10 mL) each chili powder and ground coriander
5 tsp (25 mL) PC 100% Pure First-Pressed Canola Oil
1 small red onion, thinly sliced
1 sweet yellow pepper, thinly sliced
1 sweet red pepper, thinly sliced
1 cup (250 mL) rinsed and drained PC Blue Menu Black
Beans
1 cup (250 mL) PC Medium Salsa
1/4 cup (50 mL) chopped green onions
2 tbsp (25 mL) chopped fresh cilantro
8 PC Blue Menu 100% Whole Grain Whole Wheat Tortillas,
warmed
- Instructions
1. Combine chicken, half of the garlic, 2
tsp cumin and 1 tsp each chili powder
and coriander in large bowl; toss to
coat. Let stand at room temperature 10
minutes.
2. Heat 2 tsp oil in large nonstick skillet
over medium-high heat. Add chicken
mixture; cook, stirring often, until
chicken is no longer pink inside, about
5 minutes. Transfer to plate. Wipe out
skillet.
3. Heat remaining 1 tbsp oil in same skillet
over medium-high heat. Add red onion,
yellow pepper, red pepper and
remaining 2 tsp cumin and 1 tsp each
chili powder and coriander; stir-fry until
fragrant, 1 to 2 minutes. Add remaining
garlic; stir-fry 1 minute. Add 1/4 cup
water; stir-fry until peppers are tendercrisp,
2 to 3 minutes. Stir in beans;
cook until heated through.
4. Return chicken mixture to skillet. Stir in
salsa; bring to a simmer. Cook, stirring
occasionally, until sauce is slightly
thickened, about 5 minutes. Stir in
green onions and cilantro. Divide
chicken mixture among tortillas; fold to
secure.

This substantial grilled appetizer showcases fresh tomatoes and basil, arguably the most summery of summer flavours. For a spicy kick, stir 1 tsp (5 mL) hot sauce into the aioli mixture.

Ingredients
1/4 cup (50 mL) PC Black Label Classic Aioli Whipped
Dressing
2 tbsp (25 mL) chopped fresh basil
2 1-inch (2.5 cm) thick slices herbed focaccia bread (each
about 6 X 3 inches)
2 PC Flavour Burst Tomato of Yore Beefsteak Tomatoes,
cored, each cut in 4 slices
- Instructions
1. Preheat barbecue to medium heat.
2. Mix together aioli and basil; set aside.
3. Grill focaccia 2 to 3 minutes, turning
once halfway, or until toasted with grill
marks. Spread each slice with aioli
mixture; top with tomato. Garnish with
extra basil leaves if desired. Serve

Bread was brought to Vietnam by French colonizers, and the name banh mi is possibly a corruption of pain de mie. The popular Vietnamese sandwich is infinitely variable, but always features a profusion of colours and textures, usually includes some form of pork, and often includes a tangy vegetable pickle. We used dense and chewy bialy buns for the base of this open-faced banh mi.

A Healthy Breakfast or Brunch -
Ingredients
Pickles:
1 carrot, cut in matchstick strips
2 tsp (10 mL) granulated sugar
1 tsp (5 mL) salt
1/4 cup (50 mL) granulated sugar
2/3 cup (150 mL) white vinegar
Half red onion, thinly sliced
Half jalapeño, thinly sliced in coins (with seeds)
1 pkg (426 g) PC Brooklyn Bialys
6 slices PC Free From Smoked Black Forest Ham
2 tsp (10 mL) PC 100% Pure First-Pressed Canola Oil
6 large eggs
1/2 cup (125 mL) English cucumber cut in matchstick strips
1/3 cup (75 mL) sprigs PC Fresh Cilantro

- Instructions
1. Make Pickles: Place carrot in bowl;
sprinkle with 2 tsp (10 mL) sugar and
the salt. Massage with hands for 1
minute or until carrot bends without
breaking. Place in colander; rinse and
drain, pressing out excess water. In
separate bowl, stir 1/4 cup (50 mL)
sugar with 1/2 cup (125 mL) warm
water until dissolved. Stir in vinegar.
Add carrot, onion and jalapeño;
submerge in liquid. Cover and let stand
for 1 hour at room temperature to pickle
or refrigerate for up to 2 weeks.
2. Toast bialys, leaving whole. Top evenly
with ham.
3. Heat half of oil in large frying pan over
medium heat. Crack 3 eggs into pan;
cook sunny side up for 3 minutes or
until whites are set. Place one egg on
each bialy. Repeat with remaining oil
and eggs.
4. Stir together cucumber and 3/4 cup
(175 mL) of the drained pickled vegetables in bowl; divide among
bialys. Top with cilantro - ENJOY.

Brimming with savoury Asiago cheese and kale, these fully cooked and perfectly smoked chicken sausages are an inspired new alternative to the usual cookout fare. Grill or pan-fry and nestle in a bun, or skip the bun and serve with grilled or roasted vegetables or salad.

Ingredients
1 bag (680 g) PC Ruby Little Gems Red Mini Potatoes
3 tbsp (45 mL) PC New World EVOO Extra Virgin Olive Oil
1 small bulb fennel (or half large bulb)
1 red onion, peeled
1/2 tsp (2 mL) freshly ground black pepper
4 PC Loads of Asiago & Kale Fully Cooked Smoked
Chicken Sausages
2 tbsp (25 mL) drained capers, roughly chopped
1 tbsp (15 mL) cider vinegar
2 tbsp (25 mL) chopped fresh parsley

- Instructions
1. Place potatoes in small saucepan;
cover with water. Bring to a low boil
over medium-high heat. Cover and boil
12 to 15 minutes or until tender but
firm; drain well. Toss with 1 tbsp (15
mL) of the olive oil in large bowl; set
aside.
2. Preheat barbecue to medium heat.
3. Halve fennel bulb from top to bottom
leaving root intact. Slice into thin
wedges about 3/4-inch (2 cm) thick;
place in another large bowl. Cut onion
following same method as fennel,
leaving root intact to keep layers
together while grilling. Add to bowl with
fennel; toss with 1 tbsp (15 mL) of the
olive oil and the pepper. Transfer to grill
basket.
4. Grill fennel and onion 20 minutes,
stirring occasionally, or until tender with
grill marks. Meanwhile, grill sausages 7
to 8 minutes, turning frequently, or until
heated through, and place oiled
potatoes directly on grill or in grill
basket 7 to 8 minutes or until golden.
5. Whisk together capers, vinegar and
remaining 1 tbsp (15 mL) oil in large bowl. Add fennel, onions and potatoes
as they come off the grill.
6. Slice grilled sausages on an angle into
1/2-inch (1 cm) thick slices. Add to
fennel mixture with parsley; toss gently
to combine. Transfer to serving bowl;
serve hot or at room temperature.
