Looking for another recipe or inspiration for your next meal?

Here's a healthy pancake recipe from our registered dietitian, Elaine Zhang

INGREDIENTS:
3/4 cup unsweetened vanilla almond milk
2 eggs
1 large ripened banana
1 1/2 cups oat flour
2 teaspoons baking powder
A pinch of sea salt

TOPPINGS IDEAS:
Greek yogurt
Fresh fruit such as blueberries or strawberries Sprinkle some shredded nuts of seeds
Interesting fact:
Do you know it is really easy to make your own oat flour? Just pour rolled oats or quick oats into a blender or food processor. Blend until the oats have turned into a flour-like texture.

INSTRUCTIONS:
1. In a bowl, mash the banana with a fork. Add the eggs, a pinch of salt, oat flour and baking powder. Mix everything together.

2. Then add 3/4 cup unsweetened vanilla almond milk. You can add more almond milk to the consistency that you like.

3. Heat a non-stick skillet on medium-high heat and spray with vegetable oil.

4. Once the pan is hot, scoop out about ¼ cup batter per pancake onto the skillet. Cover and cook for about 2-3 minutes on one side. Flip and cook for about 1 -2 minutes or until golden.

5. Serve with a layer of greek yogurt and berries! Sprinkle some chopped nuts or seeds on top if desired.
Enjoy!

Storage:
Allow the pancakes to cool to the room temperature before storing. Place a parchment paper in between each pancake. Seal tightly in a freezer-friendly zip lock bag. It usually can be stored in the freezer for 1 month.
