I have worked the past 8 years as an In-Store Dietitian at the Milton and Oakville Real Canadian Superstores. As a culinary enthusiast, I have a passion for making healthy eating fun and delicious. The grocery store is my office and allows me to offer a variety of personalized services such as individual, adult, and children group store tours, workshops as well as individualized nutrition counselling sessions. I understand that nutrition and lifestyle changes can be difficult especially when life is busy, and I know that without these changes, progress cannot be made. With kids back to school and a sort of back to normal meal planning is more than ever needed , to ensure your family has nourishing and balanced meals .
Meal planning has always been a lifesaver .

One pot / pan meals are my favorite .
This air fryer Cajun style shrimp , sausage and veggies meal was delicious and very easy to make . You can adjust the veggies to your liking . More is better in my books .
Pair this with brown rice , or quinoa for a balanced meal !
Here’s the recipe:

INGREDIENTS

1 tablespoon Cajun or Creole seasoning
24 (1 pound) cleaned and peeled extra jumbo shrimp
6 ounces fully cooked Turkey/Chicken Andouille sausage or kielbasa*, sliced
1 medium zucchini, 8 ounces, sliced into 1/4-inch thick half moons
1 medium yellow squash, 8 ounces, sliced into 1/4-inch thick half moons
1 large red bell pepper, seeded and cut into thin 1-inch pieces
1/4 teaspoon kosher salt
2 tablespoons olive oil

INSTRUCTIONS

In a large bowl, combine the Cajun seasoning and shrimp, toss to coat.

Add the sausage, zucchini, squash, bell peppers, and toss with the oil.

Preheat the air fryer 400F.
In 2 batches (for smaller baskets), transfer the shrimp and vegetables to the air fryer basket and cook 8 minutes, shaking the basket 2 to 3 times.
Set aside, repeat with remaining shrimp and veggies.
Once both batches are cooked, return the first batch to the air fryer and cook 1 minute.

Enjoy!

Sunday’s are my day with my dad and this means that delicious food is on the menu😋.
Dessert is a must and I am always looking for a recipe that fits in with my dads dietary needs .
This power fruit crumble fits the bill .
Not only is high in fiber and low in sugar but it’s very easy and quick to make …. Best of all delicious . I like to pair this crumble with Greek yogurt just to round it out , but of course you can pair this with your favorite ice cream .

Power Fruit Breakfast Crumble
Serves 6

Ingredients
• 1 cup package
• 1 cup (250 mL) PC Organics Quick Oats
• 1/3 cup (75 ml) butter
• 1/4 cup (50 mL) packed dark brown sugar
• 2 tsp (10 mL) cornstarch
• 2 tsp (10 mL) finely grated lemon rind
• 1 tbsp (15 mL) fresh lemon juice
• 1/3 cup (75 mL) all-purpose flour
• 1/4 tsp (1 mL) salt

Instructions
1. Preheat oven to 375°F (190°C).
2. Place frozen fruit in 8-inch square (2 L) glass baking dish. In small bowl, stir together 1 tsp (5 mL) of the brown sugar, cornstarch, lemon rind and juice; stir into fruit.
3. In another bowl, combine oats, flour, remaining brown sugar and salt; using fingers or fork, work in margarine until fine crumb consistency. Sprinkle evenly over fruit.
4. Bake in centre of oven until crumble topping is browned and fruit is bubbly, about 45 to 50 minutes. Cool for 15 minutes. Serve warm with yogurt.
