Spinach and Cottage Cheese Stuffed Chicken
Serves 4
1 serving = 1 protein, ½ fat, 1 dairy, ¼ veg, 1 condiment
Ingredients
• 4 – 4oz boneless skinless chicken breasts
• fresh ground pepper , to taste
• 2 tsp olive oil
• 1 cup fresh baby spinach
• 2 garlic cloves , minced
• 1/2 cup 1% cottage cheese
• 3 oz part skim shredded mozzarella cheese , divided
• 1 egg white
• 1 cup pasta sauce (must be less than 100 calories, 400 mg sodium per ½ cup)
• chopped fresh parsley , for garnish
Instructions
1. Preheat oven to 375F.
2. Lightly coat a baking dish with cooking spray and set aside.
3. Slightly pound each chicken breast to an even thickness - DO NOT pound it thin.
4. Cut a pocket on the side of each chicken breast and carefully cut it open - DO NOT cut through.
5. Season with pepper and set aside.
6. Heat olive oil in a non-stick skillet.
7. Add spinach and garlic; cook for 2 minutes, or until wilted, stirring frequently.
8. Remove from heat and let the spinach cool down.
9. When cool enough, combine spinach, cottage cheese, 2 oz mozzarella cheese, egg white, and pepper in a mixing bowl; mix and stir until well combined.
10. Evenly spoon spinach mixture over prepared chicken breasts.
11. Seal the chicken breasts with a toothpick and transfer to previously prepared baking dish.
12. Spoon sauce over the chicken pieces.
13. Cover the dish and bake for 25 minutes.
14. Uncover and sprinkle with remaining 1oz mozzarella cheese.
15. Put back in the oven and continue to cook for 20 more minutes, or until cheese is melted and chicken is cooked through.
16. Remove from oven and let stand 10 minutes.

Chocolate Chip Banana Bake
Serves 1 = 1 starch, 1 fruit, 1/2 protein, 1 condiment
Ingredients:
1/4 cup rolled oats
1/2 banana
1 egg
1 tsp vanilla extract
1 tsp baking powder
1/2 tbsp Hershey's Chipits milk chocolate chips
Directions:
Preheat oven to 350F. Add all ingredients to a blender (except for chocolate chips) . Blend until smooth. Transfer to oven-safe ramekin and stir in chocolate chips. Bake for 20 minutes (or until toothpick inserted into center comes out clean). Enjoy!

Meal Prep Tip!
No time to meal prep an entire dish? Simply prep ingredients for mealtime convenience.
Cook extra protein (chicken, steak, ground beef, etc) and starch (quinoa, rice, pasta, etc) and store in the fridge so that you can quickly assemble meal prep bowls.
We also recommend washing, and chopping veggies so that you can easily add them to bulk up your meals.
Choose a condiment and/or season with salt-free herb/spice blend to add flavor to your meal.

Lemon Blueberry Breakfast ChiaCake
Serves 3
1 Serving = 1 Protein, 1 Starch, 1 Fruit, 1 Fat
Ingredients:
78g Kashi Organic Cinnamon Harvest Biscuits (190 calories, 43g carbohydrates, 6g protein, 6g fiber per 55g)
¾ cup unsweetened vanilla almond milk
2 ¼ cups Reduced Sugar Vanilla Greek Yogurt
1 ½ cups frozen blueberries
2 tbsp lemon juice
1 tsp corn starch
3 tbsp chia seeds (100 calories, 6g fat per 1 tbsp)
Directions:
Add frozen blueberries to a microwave-safe dish and microwave for 1 minute, then mash with a fork. Return to microwave and heat for another 30 seconds, then mash again until it resembles jam. Stir in lemon juice, corn starch, and chia seeds and stir until combined. Line up 3 glass meal prep containers. Add 26g of Kashi biscuits to each container. Then add ¼ cup unsweetened almond milk to each and mash with a fork and flatten to form a base layer. Add ¾ cup Greek Yogurt to each container. Divide blueberry filling evenly and spread to make top layer. Cover with airtight lid and refrigerate for up to 3 days.

Were you afraid to step on the scale this morning after Christmas indulgences? ⁠

Holiday Pinwheels
Serves 4
1 Serving = 1 starch, 1 dairy, 1 fruit

Ingredients:
2 large tortillas (10")
1/4 cup dried cranberries
1/2 cup cream cheese
2 oz feta
2 tbsp green onion
Black pepper, to taste
Fresh parsley, optional

Directions:
Prepare the Filling: In a medium bowl, combine the cream cheese, chopped cranberries, feta, and green onions. Stir until everything is well mixed and creamy. Season with pepper, to taste.

Assemble the Pinwheels: Spread about half of the mixture evenly over one tortilla, covering it completely to the edges.
Roll the tortilla up tightly. Repeat with the remaining tortilla and filling.

Chill: Wrap each rolled tortilla in plastic wrap and refrigerate for at least 1 hour to allow the filling to set and make slicing easier.

Slice and Serve: Once chilled, unwrap the tortillas and slice each roll into 1-inch pinwheels. Arrange the pinwheels on a serving platter and garnish with fresh parsley if desired.
