Spinach and Cottage Cheese Stuffed Chicken
Serves 4
1 serving = 1 protein, ½ fat, 1 dairy, ¼ veg, 1 condiment
Ingredients
• 4 – 4oz boneless skinless chicken breasts
• fresh ground pepper , to taste
• 2 tsp olive oil
• 1 cup fresh baby spinach
• 2 garlic cloves , minced
• 1/2 cup 1% cottage cheese
• 3 oz part skim shredded mozzarella cheese , divided
• 1 egg white
• 1 cup pasta sauce (must be less than 100 calories, 400 mg sodium per ½ cup)
• chopped fresh parsley , for garnish
Instructions
1. Preheat oven to 375F.
2. Lightly coat a baking dish with cooking spray and set aside.
3. Slightly pound each chicken breast to an even thickness - DO NOT pound it thin.
4. Cut a pocket on the side of each chicken breast and carefully cut it open - DO NOT cut through.
5. Season with pepper and set aside.
6. Heat olive oil in a non-stick skillet.
7. Add spinach and garlic; cook for 2 minutes, or until wilted, stirring frequently.
8. Remove from heat and let the spinach cool down.
9. When cool enough, combine spinach, cottage cheese, 2 oz mozzarella cheese, egg white, and pepper in a mixing bowl; mix and stir until well combined.
10. Evenly spoon spinach mixture over prepared chicken breasts.
11. Seal the chicken breasts with a toothpick and transfer to previously prepared baking dish.
12. Spoon sauce over the chicken pieces.
13. Cover the dish and bake for 25 minutes.
14. Uncover and sprinkle with remaining 1oz mozzarella cheese.
15. Put back in the oven and continue to cook for 20 more minutes, or until cheese is melted and chicken is cooked through.
16. Remove from oven and let stand 10 minutes.
