Cinnamon Apple Quinoa Breakfast
Serves 2
1 Serving = 1 starch, 1 fruit, 1 condiment

Ingredients:
1/3 cup quinoa
1 cup water
2 apples
2 tsp cinnamon
2 tbsp honey
2 tbsp Greek yogurt

Directions:
Peel and core both apples. Chop them into bite-sized pieces. Add quinoa, water and apples to a sauce pan. Bring to a boil, cover and reduce to simmer for 20 - 25 minutes. The apples will be soft and the quinoa will have absorbed the water. Stir in cinnamon and divide into 2 equal portions. Drizzle with honey and sprinkle with additional cinnamon (if desired).

Rosemary Turkey Meatloaf
16oz. ground turkey
2 garlic cloves , minced
1 cup bread crumbs
1 tsp. pepper
1 onion, chopped
1/4 cup chopped green onion
1 tbsp. chopped fresh rosemary
1 egg, beaten
1 cup pasta sauce
1 tbsp. Dijon mustard
½ cup balsamic vinegar
Preheat oven to 350 degrees. Lightly grease loaf pan. In a large mixing bowl, mix together the ground turkey, bread crumbs, onion, & egg. Season with balsamic vinegar, pepper and rosemary. Press into the prepared pan. Blend together the tomato sauce and mustard; pour evenly over the top of the loaf. Bake for 1 hour until the juices run clear when pricked with a knife.
Serves 4- Exchange: 1 Protein, 1/2 starch, ½ veggie & 1 condiment .

Steak and Potato Skillet
1 lb. (16 oz) boneless beef sirloin steak, cut into thin strips.
2 tbsp. oil
2 small potatoes, cubed
1 cup chopped carrots
¼ cup water
2 cups sliced mushrooms
1 cup sliced onions
Cook and stir meat in oil in frying pan on high heat 2 min., or until browned. Remove from pan, set aside. Add potatoes, carrots and water to pan. Bring to boil; cover. Reduce heat to low; simmer 15 minutes. Stir in mushrooms, onions and meat; cook and stir on high heat 5 minutes or until heated through.
Makes 4 servings 1 serving = 1 protein, 1 fat, ½ starch, 1 ½ vegetable.

You don't have to overhaul your life overnight. Taking tiny steps - not giant leaps - is the best way to achieve lasting results!⁠

The Weekend is here! Meal Prep, underway🥣

Tomato Lentil Soup ⁠
Serves 4⁠
1 Serving (approx. 1 cup) = 1/2 protein, 1/2 fat, 2 veg, 1/2 dairy⁠

Ingredients:⁠
2 tsp olive oil⁠
2 cups white onion, diced⁠
1 cup very finely diced green pepper⁠
1/3 cup very finely diced cilantro⁠
3 cloves garlic, minced⁠
1 tsp cumin⁠
1 tsp ground coriander⁠
1 tsp ground turmeric⁠
1/2 tsp garlic powder⁠
1/2 tsp oregano⁠
¼ teaspoon cayenne (optional)⁠
1 - 796ml can crushed tomatoes, no-salt-added⁠
1 cup canned green or brown lentils⁠
2 cups coconut milk⁠
Freshly ground black pepper⁠

Directions:⁠
Heat olive oil in a large pot. Add onion, green pepper, cilantro and garlic. Sauté until onions are translucent and green peppers soften. Bring heat to medium low and add in spices and crushed tomatoes, simmer for a few minutes . Stir in lentils and coconut milk. Season with freshly ground black pepper. Bring soup to boil, then reduce heat and simmer over medium low for 20-30 minutes or until lentils are soft and tender. If the soup is too thick for your preference, you may add water (approx. 1/2 cup water). Divide into 4 equal portions. ⁠

Refrigerate for up to 5 days or freeze for up to 3 months. Reheat in microwaveable bowl or on stovetop.⁠
