Quick GF Almond Flour Banana muffins
A nice quick side to breakfast, or snack for kiddos and adults (:
optional walnuts, blueberries, or dark chocolate chips for extra fun for your taste buds
This is:
*gluten free
*dairy free
*high protein
*and tastes delicious
Recipe:
*avocado oil (or butter if not DF) your muffin tins
*set oven to 350
Dry bowl:
2 cups almond flour
1 - 2 cups vanilla protein powder (optional)
2 tsp baking soda
Lots of cinnamon
Pinch of salt
+
Wet bowl:
3 eggs
4 mashed bananas
1 tsp ish vanilla
1/4 cup maple syrup
+
Chopped walnuts or pecans
Or
Dark chocolate chips
Or
Fresh/frozen blueberries
(To fold in)
Mix dry and wet separately.
Then combo in the bigger bowl.
Fold in the other ingredients if you want.
Put into muffin tins.
Bake for 25 mins (+/- depending on your oven)
Nothing fancy!
The ones pictured are banana, with pecans and pumpkin seeds and a little organic oat sprinkle.
