EGGPLANT BROKEN LASAGNA
Serves 6
Ingredients:
• 2 eggplants
• 1 bulb garlic, peeled
• 4 tbsp olive oil
• 1 red onion, diced
• 1 tsp smoked paprika
• 100g sundried tomatoes
• 2 tbsp tomato paste
• 1 tbsp balsamic vinegar
• 800g roma tomatoes, diced
• 250g cooked black lentils
• 200ml water
• 100g walnuts (crushed)
• 10g fresh oregano (or 1 tsp dried)
• 150ml plant-based cream
• 8 dried lasagna sheets
• 100g plant-based cheese
• Salt & pepper
Directions:
Cut eggplants in half and roast eggplants cut-side down with peeled garlic at 395F for 40 mins
Sauté onion, then add garlic, paprika, tomato paste, oregano, and sundried tomatoes, stir and cook for 5 minutes
Add lentils, tomatoes, balsamic, and water. Simmer for 10 mins
Scoop out insides of roasted eggplants and stir in with roasted garlic
Break in lasagna sheets and mix
Top with cream, walnuts, and cheese
Bake 30 mins until golden, let cool for 10 minutes before serving
