My version of self-saucing meatloaf for hungry kids. Recipe varies depending what I have but this had grated beetroot and carrot, dried rosemary, onion, silverbeet (all fried a bit to soften) then mixed up with lamb and beef, egg, oats, miso paste, tomato paste and ground black pepper. Topped with a tomato mix (to keep moist and saucy) before baking. Topped mine with extra vege, pesto and microgreens from Luke has decided he likes the "mini veges"... Yay, for now anyway. Lots of nutrition in a small amount 💚 I would share a recipe but I haven't written it down as I just throw things in no measuring 😅😂 I'll work on that 🙏
