Chocolate mouse 😋
When u need chocolate but trying not to buy so much after weeks of sickness.... such a simple recipe by and sooo yummy. I sprinkled cacao nibs on top for crunch. Amelia and I enjoyed it after a little session in the garden 🌱

So little time with little person who rarely naps 😴
This dinner felt like a mammoth task but was inspired by barrier curry (adapted with chickpeas instead of lentils) and vege box gorgeous potatoes. Added gevity bone broth for added nutrition. Of course for the kids i roasted kumara chips (one safe food as recommended by .eat.in.color) and separated the curry components out. Amelia surprisingly liked my pickled red onion mix!

My time is so limited and even a simple curry is such a struggle these days but i felt proud of my efforts... Not an everyday achievement these days. I did a "food quiz" and tried to include kids in the process 😅

Vegan chocolate tahini oat muffins
My made up recipe packed with nutrition... Linseed, chia, tahini, molasses, apple sauce (can use yoghurt instead) Very quick, simple and ingredients can be adapted to what i have on the day 👀🤔😅

Happy Belated New Year friends 💚🏵️🌻 i hope this year is filled with lots of wonderful things... even if its simple wonderful ❤️
We have celebrated with lots of time in nature, we've camped at peel forest and then been to beautiful lake Tekapo for a few nights ☘️⭐
With fussy and little eaters i find doing simple plain dinners with different components the best... For me and the kids!!!
Tonight i boiled up my Dad's newly dug potatoes, poached a couple of eggs, opened a can of beetroot, jar of olives, avocado.... So simple, so yummy and kids can choose what they want. I'm finding the hands off, just provide approach much more stress free. Thanks to .eat.in.color for tbe tips

My quick herbal honey.

Luke had a sore ear and I'd run out of my lovely Central Otago Thyme tincture.

Quick dash out to the garden and picked a couple of handfuls of thyme... I roughly chopped and covered with honey. After an hour or so it was tasting of the herbs. Its quite fragrant after a day or so!! Luke detected it was not just honey and wasn't so keen (definitely medicine then I reckon)

I find Thyme so great for any respiratory illness including threatening ear infections.

Strain and eat by spoonful 🍯🌿

Big basket of calendula harvested today. The best herb to grow as it literally just pops up once you have it in your garden. It doesn't seem to mind I've neglected it and it's thrived. 🏵️Interestingly, it is a herb that is very supportive and nurturing! A great healer of wounds internal and external. Great for a damaged gut, post surgery... or a soul in need of love. 💚

I'm planning to dry it and make a beautiful body oil to use to make balms and for massaging as is into skin. Great on baby's skin too. Petals can be sprinkled in salads or in sandwiches

Rhubarb loaf whipped up tonight after I couldn't find a recipe I was thinking of to make... And didn't have time or want to disturb independent play in the lounge 😉 was really yummy with a cup of roibois tea. Of course, I'll have to write down a rough recipe as no time to measure it all 😏

Life update: I'm heading back to work on Monday (after much much thought and indecision). I will continue to work on my dream of nourish 🙏 my work as a nurse in the neonatal unit will no doubt be another inspiration to how much women need more nurturing and support!

I'm trying to stock up the freezer with quick easy baking and meals... Big chilli mix going to be made tomorrow. Love to hear.... What's your go to freezer meal?...

My version of self-saucing meatloaf for hungry kids. Recipe varies depending what I have but this had grated beetroot and carrot, dried rosemary, onion, silverbeet (all fried a bit to soften) then mixed up with lamb and beef, egg, oats, miso paste, tomato paste and ground black pepper. Topped with a tomato mix (to keep moist and saucy) before baking. Topped mine with extra vege, pesto and microgreens from Luke has decided he likes the "mini veges"... Yay, for now anyway. Lots of nutrition in a small amount 💚 I would share a recipe but I haven't written it down as I just throw things in no measuring 😅😂 I'll work on that 🙏

Quick and easy wholesome bread. Recipe from my friend Karen. I adapted today as had no psyllium or buckwheat flakes so I used rolled oats and h**p seeds (new favourite seed!!!). It was yummy warm from the oven... And Amelia enjoyed it as you can see 😋 Base was 300g buckwheat flour and 100g oats and 1 cup of seeds.

Mine wasn't quite Gluten free as contained oats. I'm really trying to cut the gluten down to see if it helps me with heavy periods... Will let you know in future if it does 🤔

And.... I've decided today I am going to start a blog to log my health journey 🙏💚

My never fail healthy pancakes (different depending what I have in cupboard) . This batch had molasses, tahini, banana, avocado...

I just mash banana and avocado in bowl and add eggs, molasses, tahini and coconut milk then dry ingredients. These had h**p seed flour, buckwheat flour, mineral salt and cinnamon. Can go in lunchboxes too as nut free 😊... and always with honey on top for Luke 🍯😘😋

A yummy smokey coffee like drink that's nourishing for the gut and cleansing for the liver.

Roasted dandelion root (and I added some burdock root as well) . Burdock.... Another wonderful liver herb... More on this herb at a later date 😊

Simmered with water for 10 to 15 minutes (minimum) then add milk of choice. I've been teaching myself to use our coffee machine to froth milk ☕ It really does make hot drinks feel so much more treaty.
