❤️ I met an old friend for lunch the other day, and wow, I have to say I was impressed by how great she looked!

She told me what she’s been doing and I confess I definitely was a little skeptical in the beginning… like is she serious? But then I thought why not give it a shot?! Now my husband won’t stop telling everyone how much I’ve changed - even he couldn’t believe it!

Wow! This recipe is awesome 😳

Butternut Squash and Apple Soup.
1 medium sized butternut squash, peeled and cut into chunks
2 sweet potatoes, peeled and cut into chunks
2 garlic cloves, in their skins
1 onion, cut into quarters
1 teaspoon of cinnamon
1 teaspoon of cumin
Salt and pepper
Fresh sage, full leaves
Olive oil
Water (if preferred chicken or vegetable stock)

Directions:
Pour over a tablespoon of olive oil to cover the veggies, garlic and sage.
Heat the oven to 425F
Place all the ingredients into a large roasting pan (if the pan is overcrowded use 2 otherwise the veggies will steam instead of roast).
Roast for approximately 50 minutes to an hour, until all the veggies are soft and slightly brown at the edges.
Remove to cool a little for 10 minutes or so and then blend in a blender with water, or if you prefer chicken stock or vegetable stock.
Check the seasonings.
Serve with a garnish of sage and a small dollop of creme fraiche, or if you prefer, a swirl of cream.

Try this awesome Chicken and Broccoli Alfredo recipe out! I'll list the ingredients and instructions below 😋

1 lb whole wheat fettuccini alfredo
1 lb chicken tenders(or chicken-soy based substitute)
2 heads of broccoli
2 tbsp butter
1 pint of fat free half-and-half
1 cup pecorino romano cheese

Directions:
Boil water and add fettuccini. Cook until al dente
Season the chicken with salt and pepper, then in goes the olive oil. Once cooked, drain the oil, add the butter and half-and-half. Pour everything over the fettuccini.
Steam the broccoli for 4 minutes and add to the mixture once the pasta is cooked. Add black pepper to taste.

I know! not the healthiest snack in the world, but hey at least they have pumpkin in it, thats healthy right? anyway I came across this awesome Pumpkin Chocolate-Chip Squares, Gluten and Dairy Free btw! They're absolutely divine and I highly recommend trying them 😍🍪

Ingredients:
2 cups all-purpose flour, spooned and leveled (I used Better Batter)
1 T. pumpkin-pie spice
1 tsp. baking soda
¾ tsp. salt
1 cup unsalted butter, room temp (I used Earth Balance Soy Free Buttery Spread)
1 ¼ cups sugar (I used 1 cup)
1 large egg
2 tsp. vanilla extract
1 cup canned pumpkin puree
12 oz. semisweet chocolate chips (This is a LOT of chips. 10 oz would be fine)
Preheat oven to 350. Line bottom and sides of 9 x 13 inch baking pan with foil

In a medium bowl, whisk together flour, pie spice, baking soda, and salt; set aside.

With an electric mixer, cream butter and sugar on medium-high speed until smooth; beat in egg and vanilla until combined. Beat in pumpkin puree (mixture may appear curdled). Reduce speed to low, and mix in dry ingredients until just combined. Fold in chocolate chips.

Spread batter evenly in prepared pan. Bake until edges begin to pull away from sides of pan and a toothpick inserted in center comes out with just a few moist crumbs attached, 35 to 40 minutes. Cool completely in pan.

Yesterday I really felt like something with a nice soup - that's when I was browsing and came up with this awesome butternut, chicken and kale stew. Surprisingly, it's absolutely delicious, and I highly recommend you try it. I'll list the ingredients below for you!🧅🥘😋

Ingredients:
Chicken Stew with Butternut Squash and Kale (Gaps, Paleo, Grain-Free)
Chicken Stew with Butternut Squash and Kale (Gaps, Paleo, Grain-Free)
Ingredients
2 tablespoons ghee (click here for an easy homemade recipe)
1 teaspoon Celtic sea salt, divided

2 yellow onions, minced

4 cloves garlic, minced

1/4 teaspoon dried thyme

2 teaspoons coconut flour
 (optional, but will help create a thicker stew)
6 cups chicken stock
4 bone-in, skin-on chicken breasts

4 cups butternut squash, cut into 1/2-inch cubes

1 large head kale, cut into bite-size pieces

1/4 cup minced parsley

1/8 teaspoon freshly ground black pepper
