If you don’t have a scrap bag in your freezer, please explain yourself!

Carrot, onion, and celery peelings and ends, mushroom stems, parsley stems - it all goes in the scrap bag. When it’s full, simmer it for a few hours and voila!

Free vegetable stock!

Bonus points if you have some chicken bones to throw in there - you can use any random bones from a chicken you have previously had for dinner. Waste not, want not!

Butternut Squash & Apple Soup

Butternut squash, apple, carrots, onion, herbs and vegetable broth pureed with light coconut milk make a creamy and nutritious fall soup.

Prep time: 15 min. Cook time: 10 min. Servings: 6

Ingredients
1 T. olive oil
1 medium sweet onion, roughly chopped
1 medium tart apple (Granny Smith, Honeycrisp etc.)
3 cloves of garlic
1-2 T. fresh thyme, chopped
1-2 T. fresh sage, chopped
1 small to medium butternut squash, chopped
2 carrots, chopped
4 c. low-sodium vegetable stock
1 can light coconut milk
1 t. sea salt
Freshly ground black pepper, to taste

Directions
In a large pot over medium heat, add in the oil and onion cooking until slightly translucent. Add in the apple and continue cooking for 4 to 5 more minutes until the apple has softened slightly.
Add in the garlic, thyme and sage and stir until aromatic, about one minute. Add in the carrots and butternut squash and top with vegetable broth and the light coconut milk. Add a pinch of salt and freshly ground black pepper.
Bring to a boil over medium-high heat, and then reduce back to a simmer, cover, and continue cooking until the squash and carrots are tender, about 10 to 12 minutes.
Using an immersion blender (or carefully transferring to a regular heat-proof blender), puree the soup until smooth and creamy. Adjust salt and pepper to taste.
Serve immediately, save in the fridge for up to four days or freeze for up to one month!

Ingredients:
8 oz. fettuccine
1 T. butter
1 T. flour
2 c. fat-free milk
1 garlic clove, minced
½ c. shaved Parmesan cheese, plus 2 T. for topping
1 c. pumpkin puree, canned or fresh
½ t. nutmeg
½ t. black pepper
salt to taste

Directions:
1. Bring 8 c. water to a boil. Add fettuccine and cook until al dente (about 12–15 min.). Drain in colander, rinse with cool water and set aside.

2. In a medium saucepan, melt butter over medium heat. Slowly add flour and whisk vigorously for 2–3 min. Mixture will turn thick and bubbly. Slowly add milk and whisk constantly until mixture thickens. Add garlic and stir in.

3. Add in ½ c. shaved Parmesan cheese, pumpkin, nutmeg and pepper. Stir until mixture has thickened and is a smooth consistency.

4. Add cooked fettuccine and mix, allowing sauce to evenly coat pasta. Salt to taste.

5. Plate 4 bowls and top each with a ½ T. of Parmesan.

Per serving: 368 calories (70 from fat), 8 g total fat (4 g saturated fat), 22 mg cholesterol, 259 mg sodium, 54 g carbohydrates, 4 g fiber, 10 g sugar, 17 g protein.
