Lemon Coconut Banana Pudding Bowl ๐Ÿ‹๐Ÿฅฅ๐ŸŒ

Ingredients

- 1 can full-fat coconut milk
- 1 box instant lemon pudding mix
- 1 banana, sliced
- Juiceplus Pur Cacao nibs 100% unsweetened chocolate rocks, sugar-free and vegan

- Optional:
- cinnamon
- crushed walnuts
- coconut flakes

Directions

1. Pour coconut milk into a bowl or container.
2. Slowly whisk in the instant lemon pudding mix until smooth and thick.
3. Let sit for a few minutes to firm up.
4. Top with sliced banana and Cacao pieces.
5. Sprinkle cinnamon or walnuts on top if desired.
6. Chill for 15โ€“30 minutes for a thicker texture.

Notes

- Add a splash of cold water only if it becomes too thick.
- Freeze for 20 minutes for an ice-cream-style texture.
- Great as a healthier dessert or sweet snack during your eating window.
