Frozen “Crispy” Chocolate

Ingredients (2 Servings):

1 Packet Ideal Protein Dark Chocolate Pudding Mix

1 Packet Ideal Protein Crispy Cereal

6 oz. water

Directions:

1. Combine Dark Chocolate Pudding and Crispy Cereal packets with 6 oz of water in an Ideal Protein shaker and mix well.

2. Place plastic wrap over a plate or prepare a silicone mold for the chocolate mixture.

3. Pour mixture onto the plate and spread out evenly. Or pour mixture into prepared mold, but not too thick!

4. Place in the freezer overnight or until frozen.

5. Remove from freezer and break into pieces.

6. Split into two portions and enjoy!

Best tip: make them in advance, freeze them, and take them out when you are ready to eat, they will thaw on their own in 20 minutes or you can put them in the microwave for 10 seconds.

Grilled Cajun Shrimp Boats: thank you Janeva Eickhoff
Yesterday I was gifted some frozen shrimp by a neighbor that had 'too much food' so I put together a quick P1 meal using the grill. So easy and yummy!!
TUTORIAL:
Peel and remove tails of the thawed, raw shrimp (be sure they're deveined too if not already). Spritz shrimp with olive oil and season with Cajun seasoning; or any other favorite seasoning.
Place on grill over medium-high coals; grill 2-7 minutes or until pink and cooked through. NOTE: Cook time will depend on size of shrimp.
Add some chopped bell peppers, tomatoes, raw red onion (or other fav veggies) to a lettuce leaf. Layer with shrimp.
Top with dressing of choice; season with salt and pepper. For the dressing, I mixed some protocol mayonnaise with the Ideal Protein Honey Mustard dressing and a bit of hot sauce. Drizzle over the top.
Chop herbs such as parsley or cilantro and sprinkle on top of the boats. Wrap the shrimp in the lettuce leaf and eat!

Thank you Dea Marie Suhai....Sautéed vegetables can be cooked without oil. Simply place your vegetables in a hot pan with seasonings and cook until tender. The vegetables will release liquid during cooking, which helps to soften them. If you prefer them even more tender, add hot water, cover, and let them steam until desired doneness.
Save you healthy oil for flavour in your finished dishes.
