With the cooler temps coming people are reaching for food to warm up. I wanted to share a yummy recipe we make often and pair with a salad and some garlic bread.

Can be made in one pot in little to no time so it's easy on those busy nights.

LASAGNA SOUP 🥣🍲

Ingredients:
* 2 tbsp olive oil
* 1 pound of ground chicken
* 1 large onion, diced
* 4 1/2 cups low sodium chicken stock
* 1 14.5 oz can of diced tomatoes
* 1 14.5 oz can of crushed tomatoes
* 8 lasagna noodles, broken into 1 inch pieces
* italian spices to taste
* 1 cup of shredded mozzarella cheese

Directions :

1. Heat 1 tbsp olive oil in large pot, add ground chicken and brown.
2. When cooked add remaining olive oil and diced onions.
3. Saute for about 3 minutes. Stiring often.
4. Add in chicken stock, tomatoes, and seasoning. Add in broken lasagna noodles.
5. Bring to a boil, reduce heat and let simmer until noodles are cooked. Approximately 20 minutes.
6. Remove from heat, spoon into bowl and top with cheese.

Enjoy :)

Apple Cinnamon Quesadilla

Not only is this Apple Cinnamon Quesadilla a hit with the kids, it makes for a quick breakfast, healthier dessert, or a great midday snack.

Prep Time 10 minutes
Cook Time 5 minutes
Total Time 15 minutes
Servings 1 Serving
Calories 234 kcal

Ingredients

1 (6-inch) whole wheat tortilla
2 Tbsp. cream cheese softened
½ tsp. ground cinnamon
½ tsp. raw honey
½ medium apple thinly sliced

Instructions

1. Spread half of tortilla with cream cheese.

2. Top cream cheese with cinnamon, honey, and apple. Fold tortilla in half; cook in medium nonstick skillet over medium-high heat, for 4 to 5 minutes, turning once, until apple has softened and tortilla is golden brown.

This Easy Turkey Chili is a comforting “stick-to-your-ribs” kind of meal. Extra lean ground turkey packs in the protein and bite-sized chunks of sweet potatoes are a delicious, fiber-filled twist on the usual bean chili. In addition to sweet potatoes, there are a number of ways to mix up your chili routine. If you’re craving a different meat, you could substitute ground chicken breast or extra lean ground beef instead of turkey. Or, use this recipe as a template and swap a cup of your favorite beans for the sweet potatoes. Not a spicy food fan? That’s okay, feel free to cut down (or omit) the chili powder. This easy turkey chili recipe maintains tons of flavor even without the heat. Want to crank up the heat? Add cayenne pepper to your heart’s content. Or better yet, mix it up with this 21 Day Fix inspired Chipotle Pumpkin Turkey Chili recipe perfect for fall, and winter seasons.

To add a bit of fun and creativity to this dinner, prep extra toppings for your family to add on top of their individual bowls. A sprinkling of grated cheddar or jack cheese, chopped green onions or cilantro, and plain Greek yogurt all make excellent garnishes.

1 Tbsp. + 1 tsp. olive oil
1 lb. raw 93% lean ground turkey breast
1 medium onion
1 medium red bell pepper
1 (10-oz.) can diced tomatoes and chilies (like Rotel®)
1 (8-oz.) can all-natural tomato sauce
2 small sweet potatoes
¾ cup water
1 Tbsp. chili powder
½ tsp. ground cumin
¼ tsp. ground paprika
½ tsp. sea salt (or Himalayan salt)
2 Tbsp. finely chopped flat leaf (Italian) parsley (optional)

Instructions
1. Heat oil in a large saucepan over medium-high heat.
2. Add turkey; cook for 4 to 5 minutes, or until turkey is browned
3. Add onion and bell pepper; cook, stirring frequently, for 4 to 5 minutes, or until onion is translucent.
4. Add tomatoes, tomato sauce, sweet potatoes, water, chili powder, cumin, paprika, and salt. Bring to a boil.
Reduce heat to medium-low; gently boil, stirring occasionally, for 20 to 25 minutes, or until sweet potatoes are tender.
5. Evenly divide chili into four serving bowls; garnish with parsley, if desired.
